Ottoman Turkish Recipe "Keshkul" - Almond Pudding

  • We are going to make a milk pudding from Ottoman times "Keshkul" (Keşkül) kashkool) also referred to as the beggar's bowl is a container carried by wandering Dervishes. Each dervish lodge had its own carvings and ornaments on their keşkül bowls, so if someone gave money or something else to the begging dervish, it would go to that lodge as a donation. The money collected with those bowls would then be used to make this milk pudding and served to the poor again using the same bowls. Therefore, the name of the pudding eventually got the name of the bowl, keşkül, coming from the Ottoman saying, “Keşkül-ü Fukara (Poor Man’s Keşkül)”.

    Ingredients For Keshkul Almond Pudding:
    1-liter whole milk
    3/4 cup (150gr.) sugar
    1/2 cup ground almonds
    1 tsp vanilla powder or vanilla extract
    For the thickening sauce (sübye):
    Little less than 1/2 cup (50gr.) corn or wheat starch
    200ml milk
    1 egg
    To garnish ground almonds, pistachios, or unsweetened coconut flakes (optional)

    I miss my wonderful Turkish restaurant in Beavercreek Ohio. I hope the lockdown doesn't hurt them. My ancestors came from Troy (Turkey) and I love to learn about foods from different countries. Glad you are feeling better. Best wishes from Reno Nevada.

    From Melbourne, Australia. Thank you for the recipe. Vanilla beans at local supermarket are $6 AUD (35TL) to $8AUD (46TL). Also,140gr of vanilla bean paste can be up to $15AUD (87TL). I still buy these products.
    $4 to $6AUD is a dozen of free range eggs, for $15AUD you can buy a kg of chicken breast.

      OH MAN..Turkey has the best pistachios. Idk about their green ones but they have ones that's pink and they are SO SO SO DELICIOUS and I don't think anyone else has them.
      Their food has so much flavor.
      Countries in asia also has lots of flavor esp when you cook it...but produce in Turkey has a deep flavor in almost everything.
      There's just something special about Turkey..it's like a special blessing. That's how I feel. Ok back to the pistachios :)

      Best pistachios comes from Iran, then Turkey, and the USA (California)...

      @@zahrag3466 I've been in Iran and eaten the pistachios there. They're almost twice the size of what we have in Turkey, they're meaty, but the taste is not the same. The Turkish pistachios really are much richer in flavor.

    Hi Aysenur 🙋‍♀️ here in Puerto Rico we have a dessert quite similar to that, we call it "tembleque" or "majarete" but we don't add any type of nuts but cinnamon yes... we also eat it hot as cereal in the mornings, thanks for this awesome video 💖

    Thank you for letting us know the history of this dessert. I would definitely try this as I love anything with almonds. I make almond halva with ground blanched almonds and its amazing. Just a bit tedious because you need to grind/puree the almonds and then cook with sugar.

    Yes. We get the word Keshkul in Urdu from Turkish language, used for the beggar’s bowl.
    Thanks for sharing this easy dessert from Ottoman times. I can add this to my usual desserts like firni made from milk n rice flour.

      No it is not. firmi is made from ground rice and milk... this is totally different and tastes different

    as-salamu alaykum, thank you for the video...here in Scotland Organic Milk from supermarket is 2.15 £ for 2.27 litres of really good milk, almonds grounded are expensive I wonder if we can substitute some with other ingredients. However I see that you make 8 portions of pudding so, for a treat I shall try it soon in sha ALLAH
