Hey there, because of the retention, the grinder might not always give the same output, especially when the grind chamber was cleaned up after the previous dose. This is a cost of single-dosing, I guess.
Hey, cool video! Your tray seems to be a lot lower than the original, is it possible to buy low trays for the gaggia? I can only seem to find ones with the original high tray that doesn't allow a scale to be fit under the portafilter.
I honestly have not made a comparison effort (by only changing the grinders and keeping the rest of the recipe a constant) so I don't have a strong opinion. But regarding workflow and dialing-in, 1zpresso is more limited because the grind size differs more between clicks compared to Mignon.

Beautiful equipment. I have honestly wondered to myself if it won't be the right choice for me. But at the end too much workflow for just an expresso. I'll go for the Gaggia Magenta Plus, much more simple and enough for my taste abilities.

Well, this is not a review, sorry if it disappointed you. Bear in mind though, for a precise estimation, advanced equipment is needed instead of basic thermometers. This is probably why there are not many reviews showing that data. In my case, I have a PID controller on my machine so I know that the brew temperature is almost always set to 93C and the steam temperature is 145C.
From my understanding it's so you know when you've hit the proper ratio between coffee and output. Lots of little variables can effect the outcome of espresso and generally you're always trying to create a better output, so you wanna know what exactly you're doing.
Consistency is important, good to know how much coffee you're putting in and getting out in the cup, based on weight of the shot rather than guestimating based on volume, with different levels of crema from different coffees it makes it difficult to tell. The few times my scale messed up mid-shot I was surprised though I managed to stop the shot and get the amount I was planning for in the cup anyway! But I never really pay attention to how full it looks in the cup.

It was already 9 bars but I agree that I need to tweak the grind size or the dose.

If you want to mod your machine, Gaggia is the best value for money. Otherwise, you need to watch some reviews.
