    Ingredients
    - 900g (1.9 lbs) lamb neck or shoulder, cut into large chunks
    - 3 large potatoes, peeled and cut into chunks
    - 3 carrots, peeled and sliced
    - 2 parsnips, peeled and sliced (optional)
    - 1 large leek, cleaned and sliced into rings - see note
    - 1 large onion, chopped
    - 1 small swede/rutabaga, peeled and cut into chunks
    - 1 liter (4 cups) of lamb, beef or vegetable stock
    - A small bunch of fresh thyme or 1 tsp dried thyme
    - 2 bay leaves
    - Salt and pepper, to taste
    - Butter/oil
    - Chopped parsley for garnish (optional)

    Looks wonderful! I've never cooked lamb; but, this recipe has inspired me to give it a try. I don't have an InstaPot so it'll be long & slow in the oven for me. Oh, how I remember my growing up years when my Mom used her pressure cooker for swiss steak, green beans with bacon and other family favorites. Listening to the spit, sputter and rocking of the pressure gauge all the while "knowing" it could blow up at any time (ah, the childhood mind!) left me as a 63-year-old not daring to use a pressure cooker.     Here in the U.K. chef we need good ole stews to keep warm even in May,lol. I love this dish Rik. I'll give it a go. Also chef I made an apple pie today for afters using your pastry recipe. I've never heard of adding vinegar before and the pastry was lovely. Ta very much chef.😃👍🏼👍🏼👍🏼

      @@BackyardChefhi Rik, yes I never knew about the acid from vinegar or lemon juice slows down the gluten and I've always been a bit afraid making pastry b coz I'm a good bread maker, too heavy handed for pastry,lol. Hubby bought me a good food processor but I only used it for making sliced veggies and that. So I made the pastry it yesterday, made it into two discs then chilled it and i5 came out abs delicious, light a little flaky and golden in colour, I cooked it in my little cosori 12 litre oven, it's brill. So I'm no longer nervous about making pastry, ta very much Rik.😃👍🏼👍🏼👍🏼 p.s. I also have the cosori pressure cooker, it's brill.

    My Welsh ancestors brought recipes to North America with them and this was one of them. I just didn’t realize it came from that branch of the family before now. We made it in an old iron pot.

    Gosh , that has brought back some memories , my late beloved hubbie really took to using the Pressure Cooker after he retired as a Postman for 26 years , walking 72 miles a week and carrying 70 lbs of mail on his back , before that he had been a Butcher for 12 years , he used to make Irish Stew frequently , very similar to Welsh Cawl but without the parsips or turnips , yours looks divine , my mouth is drooling , my wedding present 1982 Pressure Cooker has sat in the larder ever since , I'm scared stiff to use it , and would probably bring the ceiling down LOL😮 !! Love your recipes and your chatter , we travelled to Hawes in The Dales a lot in our touring caravan , complete with a fully iced and fully marzipan Christmas Cake , made with a tin of strawberries , a bar of Bournville Dark Chocolate , and sultanas soaked overnight in brandy , my Freddie loved Christmas Cake , his idea of a slice was not 3" x 1" , instead it was a slice the whole way across the cake , great recipe , very moist cake , just scrummie ! We have travelled all over the UK and Ireland , complete with 2 cats , great memories , great times of
    34 years spent with a wonderful husband , a great guy , brilliant sense of humour and 6ft 2ins , spitting image of Billy Connolly he was , and he had his goatee beard long before Billy , he loved Yorkshire folk , said they were the salt of the earth , straight as a dye , outspoken but solid , it was in his blood as his grandfather was a Yorkshire man !! So thanks for the memories Rik , will definitely be trying this in my Slow Cooker , even over at my caravan in Scotland , on the shores of Loch Ryan , greetings from Belfast , bit overcast presently , but hoping for some sunshine , very green here , love this time of year , with the trees out in new leaves and the hedgerows bursting with wild flowers and my garden in full bloom with fuchsia azaleas and minature peach and yellow rhododendrens , perfect , take care ATVBW😊❤😊❤

    I lived in Wales for a shortish time. Met fantastic friends whom I still have contact with. One of them used to take me home with her to her parents for our days off. Her Mum made Cawl and it was fantastic , we would come home with some. My friend who is married was all prepared for the 'no that just doesn't taste like. My Mum's Cawl' when first married got that sentence but with YOUR MUM 'S Cawl. You need to get her to teach you.... She was kind of shocked!. Her mum also used to cook fabulous Sewen..... A fish lover I am not, but this was great, and of course a good roast lamb. I loved laverbread and good thick Polish bacon that I have never found anywhere else.... Thank for trip down memory lane.... Problem is.... Its won't taste the same as my friends Mum's.... 😪

    Thank you for an introduction to the Instant Pot, RIk! I was raised on a pressure cooker by a very nervous mother, and I have been avoiding buying an Instant Pot for that reason. But not only does it look simple to use, but it also seems safe!

      You are so welcome! Yes very safe indeed. This is not a promotion either i have no connection to Instant pot or any other pressure cooker. I think the Instant pot is an amazing bit of kit for the kitchen. It gives you more downtime and that's what we all need in a day - Why stand for 2 1/2 hours checking a stew when you can switch on and leave it. It makes so much sense to me.     I was brought up on cawl in the winter but it was the cheapest of ingredients. .lamb shanks , swede , cabbage , onions , potatoes and all the leek ..white and green ..it's not the winter but thanks Ric ..it's got to be cawl this week ..crusty bread and lashings of salted Welsh butter

    Brilliant I must try your way of doing it. I usually make this for the Welsh on News Years Eve and we put it in the fridge for New Years Day. Winter is the best time for it it's delicious.. Neeps Tatties and haggis is another one I do for Burns Night. Summer time it's paella time and also pickles, sausage rolls or sausage lattice boiled eggs, ham / corned beet and salad and a bread cake with some potatoes and maybe quiche or scotch egg. yummy.

      If I may interject here-I love my Instant Pots (I have three). If it's used frequently it's well worth the counter space. They make a 3qt but even for a single person I would recommend the 6qt.
      They do so many things. Soups and stews, of course. Porridge from whole grains, like steel-cut oats. Rice and other grains. Steaming veg (outstanding for mashed potatoes). Curries. Dried beans/lentils. Four minute pasta. Even yogurt, if you get one with that setting. It does have a saute setting but like Rik I don't use it, it's just too hot for that. But I do put veg in a steamer rack, add water and use the saute function with the glass lid to steam veg.
      There is also a 'pot-in-pot' option. You place your casserole dish in the liner on a rack with water in the bottom and pressure cook. You're basically steaming the casserole. It replaces oven cooking. Broil afterward if you like top browning. This method works for cakes and cheesecakes. You can get stacked pans to do two different dishes at once (Amazon) or two portions of the same one, of course. I've used it to reheat food-nothing dries out.
      They're perfectly safe. Just be sure the gasket is intact, the pressure knob is set to close and there's *always* water in the bottom. If you do a quick release be aware of the steam and you may need to toggle it if it wants to sputter.
      They are fast and energy efficient and don't heat up the kitchen. I use my 8qt almost daily. It lives on my counter and we're just two of us. But, I do cook all our meals from scratch and we're mostly vegetarian. But when I do make meat stew it gives you hours-long tenderness in minutes as Rik showed.
      Long post, I know, but the Instant Pot does so very much and we love it so, I had to share.

    I do this with beef. I don't even peel the potatoes. On mine pushing the stew button gives you 28 min. If I don't have more than fresh potatoes, I add canned vegtables after. It tastes better the next day for those. I have even added a can of tomatoes. It's whatever your cupbard has. Rarely get lamb available except at Easter and at what you would call posh prices. There was more available in the 1970s. My mom would make mutton stew as well. Dad like it to remind him of his war time in Australia.

    Rik I studied at Cardiff for 4 years and love Welsh food especially cawl and Barra breath with butter. Top tip I was given by a local cook of Italian heritage who's family moved to Wales in the 1950s, her father was a miner. Although not traditional but true to her heritage she adds a small glass of red vermouth. You still get the lamby taste but with a tiny background of flora taste too though very subtle. I enjoyed your cooking style. Well done on 100k subs 🎉🎉🎉👏👏👏👏

    Nice one. I cook a chicken and leek soup (with carrots, potatoes, celery, and peas) and that is something like a stew. My wife loves it even more the second day as the potatoes gives off more starch (?) and thicken it even further. Sadly she doesn't care much for lamb, but I wonder if I could substitute chicken or pork. OK, it wouldn't be a cawl.

    Looks amazing!
    Totally agree with browning the meat in a pan first instead of the Instant Pot. I'd been using the saute function on mine, but it seems to take ages to reach temperature, and it makes the job harder. A pan is so much easier and gives you more control. I always brown meat in a pan before placing it in a slow cooker 🤷‍♀
    I've not tried stew made with lamb before, but I definitely need to now 😋

    That'll put hairs on your chest! I must admit that I'm not a lover of lamb. I make my stew with beef. When I do, I always do chunky veg. The parsnips and celery look lovely. I have to cook this Rik. I like to dook (dunk) my bread into the gravy. It's definitely a winner for me.

    Years ago, before I had my kids, my ex husband and I went to Wales for a camping holiday. We decided on a walking day and battled the elements of rain, sleet, mist and sun. By 2 ish we were starving and had been wet through, dried out and wet again! We got to a lovely village called Little Haven and because we were cold ordered the Welsh Cawl. I couldn’t wait for it to arrive, and I was day dreaming about the tender lamb, soft vegetable and tangy lamb gravy. When it came, it was a tiny bowl with a doorstep of bread. That’s obviously how they filled you up. It wasn’t exactly cheap either. I took my first spoonful………….the veg was crunchy, the lamb chewy ad gristly and there was basically no flavour to it. How I wish you’d been the cook that day Rik. There would be nothing amiss with your Welsh Cawl. It looks wonderful and just what we needed that day. We left disappointed and hungry still. For the price we paid, there wasn’t even any butter for the bread! Lovely village, terrible pub. That was years ago now though. xxxxx

    Rik I’ve never had lamb but we do here make beef stew ,we sear the cubes of beef and as you did ,veggies of our choice.😊 absolutely delish.

    Meat and potato stew with assorted veg, in all it's incarnations is always a win. American style biscuit, hunk of crusty bread, fluffy dumplings, even everyday bread and butter and look out :) This version with lamb(could also use mutton, just cook the meat longer), without tasting or smelling it, I can tell is absolutely superb. Something about the flavor of sheep meat that takes things into another dimension. Another good one. Thanks Rik.

    A great hearty looking stew Rik, reminds me of my Mum’s Scottish stew we had growing up, only made with diced stewing steak instead of lamb 😋 … delicious 🤤 I was known to eat my way through half a loaf while enjoying this, my mother used to say I must have had hollow legs as I was thin as a rake & could eat like a hungry horse!😆 I’m currently saving up to buy an electric pressure cooker, what size is the insta-pot you use if you don’t mind me asking Rik?       David, loved reading this mate - I think we all grew up dunkin bread in the stew - I cut all that out or the video would have been longer and might not have appealed to anyone. I'm a dunker - bread always in gravy and stews. There is a link in description for the pressure cooker - you dont have to get it there - however you could compare prices.     Great video! I am envious of the beautiful lamb you're cooking with. Its prohibitively expensive here in the States, much more than even top grade beef. But luckily you can still get the occasional deal, and I keep my eye on the clearance rack to get my occasional sheepy fix😂

    Rik, thanks for this reminder of a dish I went mad for on a holiday in Wales, but haven't done myself for years. I used to use up left over roast meat in it. Also thanks to the commentators who mentioned adding cheese, although I think I used to melt it in the hot dish.

    I just ordered one of those instant pots (the small 3 litre one though, just the right size for me and it was the cheapest!) Heading into winter soon here in Australia and it'll the perfect time to start cooking some comfort foods like this. Using a pressure cooker for the first time will be a bit of a novelty anyway, looking forward to it.

    I do love the traditional recipes Rik. My Gran used to have a stew pot by the fire all winter and add whatever to it. We used to call it surprise stew. I use a slow cooker now and do much the same.

    30 minutes? When I lived in the wilder part of west Wales, my neighbours used to make cawl the old fashioned way: in a pot over the fire in the inglenook. All sorts of scraps were thrown in and portions taken out periodically. A pot might have a lifespan of 2-3 weeks, and at that point I admit I was hesitant to accept a bowl because when the fire went out overnight, it would cool down making good conditions for bacterial growth! I think I prefer your method, which is closer to a Lancashire (if I dare mention the place to a Yorkshireman) hotpot.

    My Grandmother would cook this and once going would just top fluids and veg accordingly as we ate it. The more days cooking the tastier it became. Beautiful.. just one thing call always has leek.

    Make this crawl (pronounced cowl) ever fortnight in the cold months. Never fry anything, only herb I use is chopped fresh parsley. My mother taught me as her mother taught her.

    I’ve made many a pressure cooker stew like that. Only difference is that my wife and I like the juice a bit thicker. I was taught to roll the meat in flour before browning it off. That in the pressure cooker turns the juice about halfway to a gravy right out of the pot, no cornstarch needed. Is that something done in British cooking?

    Cawl is just a stew of whatever you have to hand, traditionally Lamb was the meat content here in South Wales, beef is cheaper these days.
