You already have the frisk/thief mon and you could just break the rocks when they respawn (getting those tasty hoenn fossils that sell for quite a while) and then keep sweet scenting while they respawn.

How do you get the hidden ability on the sableye? Is it luck or is there a way to guarantee the shiny has the hidden ability
You can use Prismatic Pearls to transfer the Hidden Ability onto a Shiny.
