I gave my very picky 16 yr old granddaughter one and she didn’t know the difference between “Grammas healthy food” as she calls it. Lol and regular flour ones. I doubled your recipe and i made 12 large ones in a 9x13 pan. They were big,fluffy and absolutely delicious! They tasted like Cinnabon Cinnamon Buns. Thank you , thank you ....a million thank you! Oh My! That bread proofer is HUGE! That's a lot of space it take up while proofing. I have been proofing my bread for many years with the easiest method. Just take a heating pad and place a cookie cooling rack over it. (I turn my heating pad to the medium setting) Place your bowl or pan of dough on the rack and cover with a dish towel. This method works like a charm, doesn't heat your kitchen, saves heating your oven or using oven space you need for something else, requires virtually no storage space, lets you proof your bread at any location you choose and saves that $200 price tag.
I just made these today. OMGGGGGGGGGGGGGGGG, AMAZING!!! Soft bread texture and taste like the real deal. These are for real legit. I love you!!! It's people like you that make keto so easy. And it helps that I enjoy baking, so I'm happy taking time to bake these wonderful treats :).

I am a new subscriber to your channel and I am so impressed! My daughter sells Keto items through her home bakery. Just some FYI for cutting and rolling cinnamon rolls. We roll the dough out on parchment paper that is lightly floured. I like the oat fibre flouring idea of yours. We then use the parchment paper to roll the dough and tighten it into a roll. We also make non-Keto cinnamon rolls that we now use the parchment paper rolling technique for. As far as slicing the rolls, dental floss works wonderfully! We drag the floss under the dough after making the scores to divide the dough into 12 rolls, then we criss-cross the floss together and it makes a clean cut without squeezing the dough down. I just made these and they are 100% legitimately indistinguishable from wheat flour/sugar cinnamon rolls. They are absolutely fantastic. I did have to add extra oat fiber and vital wheat gluten because my dough was too wet after mixing the wet and dry ingredients. I divided them into 12 and it took a little over 2 hours for them to rise enough to touch each other. This recipe is a keeper.
My first attempt produced a wet loose dough as well. I had used the gram measures. On my second attempt I used cup measurements and weighed each addition. I got 23g more vital wheat gluten, slightly less lupin flour, and slightly more oat fiber from my measurements.
Samyah this cinnamon keto roll is the best! It tastes like a Cinnabon from the mall! Almost hard to believe it's keto! I hope you make a keto cookbook & get the recognition you deserve for your recipes!
These cinnamon rolls are RIDICULOUSLY GOOD! Easy to prepare. I halved the filling ingredients since she stated she only used about half of what she had prepared, and it came out to be just enough. I ended up having to bake mine about 20 minutes, my oven must be off. So good!

Since going keto I've done guava cream cheese everything, including your rolls here just subbed cinnamon filling with guave jam and cream cheese. Did the same with your donut recipe, guave jelly filled with cream cheese icing. Thank you for what you do 💙

I have made these 3 times . Today I doubled recipe and prep them and put half in in freezer ready to thaw and bake when needed. I am in love with this recipe . My hubby ate my last one this morning and he is not a Keto boy lol! But !he is on my naughty list for his indulgence 🤨 honestly you are a gem and always on my go to ! These are fantastic! Let me just say that I have been so unimpressed by most of the keto dessert recipes I have made. I am insulin resistant and swing from pre-diabetes to high normal blood sugar. These cinnamon rolls DO NOT affect my blood sugar at all and I couldn't be more excited. Cinnamon buns are the one of things I miss the most doing Keto...and now I don't have to feel like I'm missing out. Thank you so much for this recipe. I can now have a nice cup of tea with a sweet treat! If you are wondering if you should make these I highly recommend!!!! I would kindly suggest editing your videos more as we do not need to see as much as you are showing and I end up skipping ahead...but still, thank you soooo much!

Note: You can turn your oven into a proofing box by preheating to 350 for 3 minutes and then turn it off. Another tip: Prevent spilling dry ingredients by pouring them onto a sheet of parchment paper, bring up the sides to form a cylinder and pour into your mixing bowl.
Made these tonight but subbed psyllium husks for oat fiber (it's what I had on hand) and they turned out so good (also my first time using lupin flour). I don't have a stand mixer so I did it all by hand 🤦♀️🙄😫🤣 so I ate 2 😋🤷♀️ Thank you for all your hard work!
I used my handmixer for a few minutes but it wasn't working to good. I ended up kneading it about 3 min which in hindsight wasn't long enough. I let them rise for almost 2 hours and they were not very big. Honestly I had started to think they were just going to be little hockey pucks...but they did rise more in the oven but definitely took longer to get golden on top but they were over done on the bottom 🙄 I'm buying a stand mixer today 😁

I got all my ingredients together for this recipe maybe 4 or so days ago, in the mail and since then I have legit made this dough about 5 times already. The very first batch I followed the recipe closely but the others I changed a few things here and there. Like I made cheddar cheese rolls, pizza rolls and chocolate pecan crescent bagel thingy:) I am already having to re-order. I am obsessed. Thank you! I was sick to death of seeing that fathead dough for every darn thing. With your recipes, to date, from where I stand, you are some of the few that makes things that actually taste like it's suppose to. These rolls are darn near a perfect dupe; I just used a little too much filling so the cooling came through from the Sukrin Gold I used. And mine didn't rise enough for my liking.

This is cooking right now. I was worried as it didn't seem to be rising at all even after the full time, but they rose beautifully in the oven. I can't wait to try them. I made regular cinnamon roll for the rest of my family yesterday and today I made some for me. If this is tasty, I will feel I can do this low carb thing to avoid carbs. It's definitely not just keto people who need to avoid carbs. I have diabetes I can control by diet if I'm VERY strict, but that is sooooo hard to give up absolutely everything. Lovely! Il make these today! He re is a tip, isntead of cutting with a knife, use dental floss. Put it in a loop around thr dough as if you are going to tie a knot (but dont tie it) amd simply pulll, perfect no effort cuts!
I just made these..and they really are fantastic. They taste great and NO CHEESE! I forgot to put the honey in with the yeast 😳 but I added it while the dough was kneading and this still came out awesome!!

I read somewhere you could put them in the fridge, then take them out and get to room temp to rise. But, I didn't know if it would work with this flour combo. My first attempt at these, using the gram measurements, failed. The dough was way too wet and loose. On my second attempt I used the cup measurements and weighed each addition. I got 98g of vital wheat gluten, 31g of Lupin flour, 23g of oat fiber, and 31 g of swerve. The vital wheat gluten made the major difference and my second attempt came out just fine. I had been using cup measurements for your bread recipe and on my last batch I went with the gram measurements because that is just so much easier than messing with measuring cups. I haven't compared those measurements since I didn't have a problem, but I noticed that the loaves came out differently....lighter color in the crust, more like store bought bread. Didn't notice any difference in taste. I bake the bread longer than called for in your recipe. I had been covering with foil after 8 minutes but let the last batch go a little longer. I use a total bake time of 30 minutes.
Thank you for including your weights!!!!! I'm so glad I decided to watch the video again before making them. The dough formed almost immediately. I wonder if I should knead it for less time than the 7 minutes. I may have overworked it as they collapsed after cooling. But they still tasted amazing.
@@drmsd14 I mixed the dough in a bread machine with a dough cycle that kneads for 20 minutes and mine didn't collapse so maybe the problem was something different?
I made mine weighing as well and the dough was super wet and after baking, the dough collapsed. Also, it tastes super gummy/chewy. I thought it was the vital wheat gluten. Thanks for your comment and I still feel like there’s too much vital wheat.
@@kerrij9724 The weights she gives in the recipe are wrong, so I used volume measures and took my own weights. My first dough using her weights was so wet I ended up trashing it. In retrospect I probably could have fixed it with more oat fiber and lupin flour. Mine were on the chewy side, but no collapse. Based on my experiences with keto baking I'm guessing they could have used more time in the oven. I use pretty much double the time she suggests for her bread recipe and like my loaves much better. I could see a big difference from the lower time when I tried to toast....I could see the moisture rising from the toaster....doubling the bake time eliminated that....but toast still comes out on the soft side, or on a longer setting, burns. I've made two attempts at her pasta recipe...both failures. Even after adjustments the dough was too sticky to run through the pasta maker attachment on my kitchen aide stand mixer.
@@kerrij9724 How long did you proof? I have a double oven....I bake in the bottom oven and prove in the top oven, which the bottom oven makes a nice warm environment. A collapse can be a sign of too much moisture in the dough, but also come from over proofing. A bread machine controls the temperature and can prove more consistently, so I'd probably assume a collapse was the product of my dough mix, but there is more guess work proving in an uncontrolled environment.
I have finally got some vital wheat gluten flour and now I’m just waiting for my oat fibre to be delivered but it is coming from your neck of the woods USA and I’m in Australia so proberly another couple of weeeks but I’m excited to try your recipes, I’ve been using lupin flour for a few years and I love it but your taking me to a whole new level! High Altitude changes everything! I am at around 5000 feet. Came out very sticky dough like cookie dough....so I added a bit of each flour till it looked like yours. Trying to proof now....I hope it works.
I live in a tiny apt, so I have no space to add any more gadgets in my kitchen, but I just put my yeasty doughs inside the regular oven with a bowl of boiling water (that I replace frequently) to let it proof.

I use cheap shower caps from Dollar Tree instead of the saran wrap. You can actually use them several times. It’s way less fussy!

I have made these 3 times . Today I doubled recipe and prep them and put half in in freezer ready to thaw and bake when needed. I am in love with this recipe . My hubby ate my last one this morning and he is not a Keto boy lol! But !he is on my naughty list for his indulgence 🤨 honestly you are a gem and always on my go to ! I also use my bread machine on dough setting...it kneads and heats it up in one step . “ oh did I say I loveeeeee them hahahaha 😁🙃😉💓💕❤️😘
Oh please let me know how they turned out after you froze them, I am the only one here and that would be great if I could freeze half my recipes.
These are fantastic! Let me just say that I have been so unimpressed by most of the keto dessert recipes I have made. I am insulin resistant and swing from pre-diabetes to high normal blood sugar. These cinnamon rolls DO NOT affect my blood sugar at all and I couldn't be more excited. Cinnamon buns are the one of things I miss the most doing Keto...and now I don't have to feel like I'm missing out. Thank you so much for this recipe. I can now have a nice cup of tea with a sweet treat! If you are wondering if you should make these I highly recommend!!!! I would kindly suggest editing your videos more as we do not need to see as much as you are showing and I end up skipping ahead...but still, thank you soooo much!

Note: You can turn your oven into a proofing box by preheating to 350 for 3 minutes and then turn it off. Another tip: Prevent spilling dry ingredients by pouring them onto a sheet of parchment paper, bring up the sides to form a cylinder and pour into your mixing bowl.
Made these tonight but subbed psyllium husks for oat fiber (it's what I had on hand) and they turned out so good (also my first time using lupin flour). I don't have a stand mixer so I did it all by hand 🤦♀️🙄😫🤣 so I ate 2 😋🤷♀️

I used my handmixer for a few minutes but it wasn't working to good. I ended up kneading it about 3 min which in hindsight wasn't long enough. I let them rise for almost 2 hours and they were not very big. Honestly I had started to think they were just going to be little hockey pucks...but they did rise more in the oven but definitely took longer to get golden on top but they were over done on the bottom 🙄

I got all my ingredients together for this recipe maybe 4 or so days ago, in the mail and since then I have legit made this dough about 5 times already. The very first batch I followed the recipe closely but the others I changed a few things here and there. Like I made cheddar cheese rolls, pizza rolls and chocolate pecan crescent bagel thingy:) I am already having to re-order. I am obsessed. Thank you! I was sick to death of seeing that fathead dough for every darn thing. With your recipes, to date, from where I stand, you are some of the few that makes things that actually taste like it's suppose to.
These rolls are darn near a perfect dupe; I just used a little too much filling so the cooling came through from the Sukrin Gold I used. And mine didn't rise enough for my liking.

This is cooking right now. I was worried as it didn't seem to be rising at all even after the full time, but they rose beautifully in the oven. I can't wait to try them. I made regular cinnamon roll for the rest of my family yesterday and today I made some for me. If this is tasty, I will feel I can do this low carb thing to avoid carbs. It's definitely not just keto people who need to avoid carbs. I have diabetes I can control by diet if I'm VERY strict, but that is sooooo hard to give up absolutely everything. So I thank you for creating recipes!

Lovely! Il make these today! He re is a tip, isntead of cutting with a knife, use dental floss. Put it in a loop around thr dough as if you are going to tie a knot (but dont tie it) amd simply pulll, perfect no effort cuts!

I just made these..and they really are fantastic. They taste great and NO CHEESE! I forgot to put the honey in with the yeast 😳 but I added it while the dough was kneading and this still came out awesome!!

Thanks for this recipe!!! I have made these twice and they are fantastic! I was wondering if you could assemble them the night before and let them rise in the morning. I read somewhere you could put them in the fridge, then take them out and get to room temp to rise. But, I didn't know if it would work with this flour combo. My first attempt at these, using the gram measurements, failed. The dough was way too wet and loose. On my second attempt I used the cup measurements and weighed each addition. I got 98g of vital wheat gluten, 31g of Lupin flour, 23g of oat fiber, and 31 g of swerve. The vital wheat gluten made the major difference and my second attempt came out just fine. I had been using cup measurements for your bread recipe and on my last batch I went with the gram measurements because that is just so much easier than messing with measuring cups. I haven't compared those measurements since I didn't have a problem, but I noticed that the loaves came out differently....lighter color in the crust, more like store bought bread. Didn't notice any difference in taste. I bake the bread longer than called for in your recipe. I had been covering with foil after 8 minutes but let the last batch go a little longer. I use a total bake time of 30 minutes.
Thank you for including your weights!!!!! I'm so glad I decided to watch the video again before making them. The dough formed almost immediately. I wonder if I should knead it for less time than the 7 minutes. I may have overworked it as they collapsed after cooling. But they still tasted amazing.
@@drmsd14 I mixed the dough in a bread machine with a dough cycle that kneads for 20 minutes and mine didn't collapse so maybe the problem was something different?
I made mine weighing as well and the dough was super wet and after baking, the dough collapsed. Also, it tastes super gummy/chewy. I thought it was the vital wheat gluten. Thanks for your comment and I still feel like there’s too much vital wheat.
@@kerrij9724 The weights she gives in the recipe are wrong, so I used volume measures and took my own weights. My first dough using her weights was so wet I ended up trashing it. In retrospect I probably could have fixed it with more oat fiber and lupin flour. Mine were on the chewy side, but no collapse. Based on my experiences with keto baking I'm guessing they could have used more time in the oven. I use pretty much double the time she suggests for her bread recipe and like my loaves much better. I could see a big difference from the lower time when I tried to toast....I could see the moisture rising from the toaster....doubling the bake time eliminated that....but toast still comes out on the soft side, or on a longer setting, burns. I've made two attempts at her pasta recipe...both failures. Even after adjustments the dough was too sticky to run through the pasta maker attachment on my kitchen aide stand mixer.
@@kerrij9724 How long did you proof? I have a double oven....I bake in the bottom oven and prove in the top oven, which the bottom oven makes a nice warm environment. A collapse can be a sign of too much moisture in the dough, but also come from over proofing. A bread machine controls the temperature and can prove more consistently, so I'd probably assume a collapse was the product of my dough mix, but there is more guess work proving in an uncontrolled environment.

High Altitude changes everything! I am at around 5000 feet. Came out very sticky dough like cookie dough....so I added a bit of each flour till it looked like yours. Trying to proof now....I hope it works.
How many flour do you add if you dont mind share? Mine came out way too sticky too after fifth attempts 🥲
I live in a tiny apt, so I have no space to add any more gadgets in my kitchen, but I just put my yeasty doughs inside the regular oven with a bowl of boiling water (that I replace frequently) to let it proof.
Just made the rolls , they are amazing. A little bit of frosting goes a long way. I think you could make half of frosting . I like it thin☺️
