If coffee could have a best friend this Banana Bread Coffee Cake would be it. I had billion bananas in my freezer so I decided to shake things up and make a hybrid of my two favorite coffee companions, banana bread and coffee cake. As usual I made this recipe with healthier ingredients that you can feel good about eating. I also wanted this to be gluten free so I created one recipe with a combination of almond flour and tapioca flour as well as a nut free version that uses oat flour. No matter which flour you use, this recipe yields a deliciously soft and moist coffee cake that would be the perfect compliment to any cup of Joe.
