Not that simple. The improvisor must have a profound grasp of melody, harmony, and structure. Improvising is not simply 'making it up as you go'. The French have been masters of this art for at least 200 years.

I'm at an advanced age and a complete super fan of the wind organ. But, this improvisation simply leaves me unemotional, especially compared to the fabulous emotional complexity of the traditional theme (simply by human voice). Yet the wind organ is capable of it. To express more with more more less ! Je suis à un âge avancé et je suis un super fan de l'orgue à vent. Mais, cette improvisation me laisse simplement sans émotion, surtout si on la compare à la fabuleuse complexité émotionnelle du thème traditionnel (simplement par la voix humaine). Pourtant, l'orgue à vent en est capable. Exprimer plus avec beaucoup moins !
What did I just watch??? That was all improvised? He didn't practice any of this beforehand? If that's the case, then he ranks right up there with Bach for improvising like this! And that footwork!!! WOW!
Yes, that’s Mr. Olivera: i’ve had the good fortune to hear him both in concert and the opportunity at an AGO convention to listen to him extensively preparing for a concert. His capacity to memorize all the strong points and weak points of an organ and develop sounds out of any pipe organ that almost known else knew were “there” or have ever achieved, is almost beyond legendary. Really one of the greatest artists of the pipe organ.
Yes, judging from the context, this was genuine, on the spot, spontaneous improvisation. This is refreshing, in a day when many organists carefully prepare their "improvisations" beforehand, to the point where these are really just memorized compositions. Hats off to Olivera!

Hector used to play theatre organ concerts. He is missed greatly in that realm. He is brilliant.
