My Sicilian Nonna made ravioli with eggless dough. She rolled out the dough by hand. It was very thin. She cut the dough with a knife and crimped the ends with a fork. Her filling was ground beef, spinach and a little bit of ricotta. I would help her sometimes. What a lot of work! They were delicious and unlike any other ravioli I've ever eaten since. Thanks Fabio for reminding me of this great pasta taste.
"We were so poor that the day we were considered poor we celebrated." 😂😂😂 it's the saddest most hilarious thing ever. The cold truth is terrifyingly funny when he says it.
My family came from Italy during the Depression, so I heard the “so poor” stories. They would tell me that a Zia would give them eggs for Christmas to make the Christmas Day pasta. Because of this poverty, the women in the family refused to make eggless pasta once they were in America. (Polenta, corn or wheat, was when eggs weren’t available.) I am glad that you showed us this recipe because I have Vegan friends that I promised to cook for, and I was afraid to make the eggless pasta. Won’t my friends be surprised, it’s not polenta for dinner! Gracia!😘 By the way, Mommom (LaMia Nonna) loved being in the kitchen cooking, especially if she was showing me how to cook. Now, I love being in the kitchen and cooking. My son’s friend even stops by when he isn’t home so he can eat my cooking. I Love it.
Yes we are mostly Irish and have these fabulous pasta making family days and I'm always begging for someone to find a drop of italian blood in our family. 😀
The secret of the "mediterranean diet; " labor intensive food prep means that you enjoy the food with your sense while burning Calories instead of eating them ;)
I made it yesterday. It's so quick, cheap, easy and delicious! It's springy, soft and olive oil is all you need with it. My new love! Going to eat it also today hahah. But I cut it differently. I heavly floured my dough circle, put it in half, flour, half and now I cut it into strings like fettuccine.
300g flour 175g hot water 1tsp Diamond Crystal Kosher Salt Consistency and reproducibility is key. If you want oil in it you can substitute some of the water for it but the important thing is 175g of liquid.
I am from the Island of St Lucia in the Caribbean and was laughing throughout the video saying to myself all st Lucians are professional pasta makers😂😂😂 because this is the most common easiest fastest cheapest, stretch to feed a large family, versatile dish you will find we call it dumplings . It is best on a rainy day cooked with Lentils and cured beef , salt fish, cured pork or whatever protein you have available. Another common way we make it is to boil cocoa with spices (cinnamon, cloves, nutmeg) and the pasta to it and towards the end add milk and it’s breakfast or a comfort food. We also make them big and shape them like wheels (the amount of dough he had would be cut in two) boil it till they float. Remove from the water then slice up plate and enjoy with any meat or stew of your choice. Some persons add a little cornmeal to it to make it harder or tougher to the bite. 😂😂😂 so funny how our world is one just different names.
Ok without a shadow of a doubt you need more subs because thats one of the most if not, the most entertaining cooking videos I've seen on youtube. Props, and then some
I just tried this out because I wanted to make fresh pasta with different flours to see if I can find a recipe that doesn't bother my stomach, but the cost of eggs makes the usual recipes impractical. It turned out great, will definitely make it again! I don't have a mixer and it was actually really easy to knead the dough by hand! Letting the dough ball rest for a while makes rolling out the noodles much easier.
Thank you for sharing this recipe of eggless pasta , I can't eat eggs , it gives me very bad allergies .😕 thank you so much , I hope you do other dishes with no egges 😍god bless you . What kind of flour did you use ? Please thank you.
Thank you ! That is amazing 😉, I didn’t know about this pasta. This would certainly help feed my family as we are going through very hard financial 😞 times . That recipe is a blessing to my little family.
Thank you for the recipe! With my few food allergies resulting with only ~14 safe foods at the moment, I loved being able to have this recipe! I was able to make it right after watching it once. I enjoyed your sense of humor and I caught myself mimicking your accent after watching. XD Thanks for the simple recipe and feel free to make more (I will be subscribing).
It is always important to return the borrowed Grandma.....and a thank-you kiss on the cheek. You are funnier than 95% of today's professional comedians.... and with valuable cooking techniques.
Really great presentation, very professional and fucking natural. Like, it all seems genuine. The music is amazing and the camera angles are excellent. Love the accent and the cooking. You did great dude. This looks like it belongs on television.
I don't know if I'll ever cook this cuz I am lazy but God I was a laughing mess because of how exasperated Viviani was of the mixer😂..... You won yourself a fan, thanks to your humor buddy...
Brilliant, I was looking for homemade Italian pasta recipe for my son who has special egg🥚free diet. Your recipe is exactly what I was looking for❤️😉thank you and subscribed
Haaaalarious, I just found my new Italian food obsession. I can't wait to try the Pici Pasta, sadly I don't have a local sweatshop granny to put to work...hahahahahahah
Thank you Thank you Thank you 😊 I will make this pasta very soon. I cant really eat eggs so I had to stop making my own pasta. I love home made pasta!!! Now I can make it again. 👍😍😊
Amigo!!!! I made the 1st version of the pasta by mistake and ate it 🤣🤣 ohh my Word!!! It was delicious!! I thought it was undercooked and this videos gave me a relief!! You have one a follower 🥳🥳
my neighbour from a long time ago her and her husband were from Italy and she always made her own pasta I remember have this with them in a light tomato sauce and cut up mild sausage
I just tried it. With me, with whole wheat flour it works without any problems whatsoever. I think it will work with absolutely any arbitrary kind of wheat flour.
You are just Fab!!!!! Thank you for the recipe coz i made ravioli but my mother couldn't eat it because of the egg content. This is awesome. Can't wait to make this for my mum.
Hi Fabio! I liked your video a lot :) I don't eat eggs so this was helpful! Is it possible to put this dough in one of those rolling machines to make lasagna sheets or spaghetti strands? Thanks!
Hi Fabio and happy new year, I've just come across your channel, I'm just getting into Italian cooking in a big way I've already been able to make a good tomato sauce, and my next goal is to make my own pasta.Ciao Assunta
Thank you so much for such a wonderful recipe! (No recipe, it's only the method, and I love it. I cannot really measure stuff and put in grams level) I am a vegetarian and cannot eat eggs. I was trying to make some Fettuccine with some random water based recipe and it broke in water like crazy. I tried some shape looking like Gnocchi and it stayed intact. I really wanna try stuffed pasta like ravioli with the water based dough. You have any idea if it would stay intact in water or will it become fettuccine type mess?

Fake Italian... There's no food stamps in Italy
"If you don't have a mixer, steal somebody's grandma. Open up a sweatshop with that grandmother. Or, you know, just buy yourself a KitchenAid."
"How much water? Idk! just put some water."
Too funny!!
Love it
Recipes are useless

Yes we are mostly Irish and have these fabulous pasta making family days and I'm always begging for someone to find a drop of italian blood in our family. 😀
I literally grew up on this homemade pasta. My mother and grandmother made it exactly the same as Fabio version (but without the mixer).
Thank you,,,"borrow a grandma", Ha! My family just stared at me while I laugh my butt off. My granny just used us kids to roll dough.
Blessings~

Why not? Just try it.

Damn...this is so cool and entertaining
How to check it is cooked ?
Can you knead this?
I like this guy. 😂
