    Tanglefoot Brewing is a small Czech lager focused brewery in Temple, TX. In 2021 the brewery opened in the back of my family's BBQ restaurant that had been operating for 53 years. The restaurant has since closed and Tanglefoot has now taken over the entire space. This UA-cam channel was started to document the process of opening, running and growing a small craft brewery.

    Your wort chiller maybe one of the reason for a yeast infection, you are right. But if you have trouble keeping temperature low in the summer there could be Diacetyl as a off flavor in your beer. Or even DMS (Dimethyl Sulfide) if you have wort contamination.

    It sounds like you've had a year with its ups and downs, but overall, it's been pretty positive. I wish you all the best in 2024.
    Regarding ramping up production, I have a suggestion. Consider exploring the option of contracting another facility to brew some of your recipes. This not only aligns with your goal of increased production but also nulls the need for substantial upfront investments in upgrades. Additionally, it opens the door to producing a more cost-effective lager, which could help offset any losses from the kegs sent to restaurants. Moreover, it seems like a more manageable approach for your system, especially until you can upgrade the glycol chiller.

    I subscribed cuz I pick up tips from ya. Just broke 1k on tube, took forever. My channel is probably too scattered or diverse to really pop. Also have a bbq. Was leasing to a brewer but he left so diving in myself. Turns out people like beer with bbq, who knew? So seems we are doing the same thing with a different focus. Anyway keep up the great vids and Happy New Year!! John

    I wish I could buy some of your beer. I would love to support you. But I'm here in Connecticut so that probably isn't doable. But I will say a lot of what you brew appears to be squarely in my wheelhouse. While I am a very serious home brewer (I typically have 3 or 4 corny kegs in my kegerator at any given moment), I do try to support small brewers that are making beer I might like. Unfortunately for me most of the local breweries in my area seem interested only in making hop bombs, which is most definitely not my thing. One local brewer seems to be getting the message and they have on offer this week some beer I plan to try: a Kolsh-style, a Helles-style, and an Altbier. The question remains whether or not they can resist the temptation of dumping a ton of hops into beer that by tradition are not super hoppy. I'll find that out today as I am going by the brewery this afternoon to pick some up to try. Fingers crossed.
