What kind of mustard you used? We have yellow mustard only.

I used Dejon mustard. Dejon mustard and yellow mustard have different and unique flavors. Dejon mustard is always best for salad dressings. However, still you can use yellow mustard. I would use 1/2 tsp of yellow mustard so that the salad does not get too sour in flavor.

You can use spinach, arugula, spring mix, red cabbage, Napa cabbage, and kale for this salad.

I used green ice leaf lettuce. But you can use any type of lettuce like, romaine, red leaf, little gem, mesclun, etc.

What is the Italian seasoning? Thyme, oregano, or what?

Italian seasoning is a blend of ground herbs. Herbs commonly included are basil, oregano, rosemary, thyme, garlic powder, sage, or coriander. I usually use McCormick brands. Thank you!
