No, the "7th dan Black Belt" does not refer to Shifu, Chen Zhonghua. It refers to the workshops host, Michael Calandra, who is a Karate Sensei and a fellow disciple of Shifu Chen in Chen style Taijiquan. You are right, there is no such thing as kyu/dans in Taijiquan or any other Chinese martial art system. Kyu/Dan belongs to Japanese martial arts (post Jigoro Kano), and those influenced by the Japanese styles such as many modern Korean martial art systems.
