Can I substitute the sugar for a cantaloupe, since cantaloupes have much better raw sources of vegan sugar, and can i substitute the cantaloupe for sugar, because I dont have another cantaoupe?

I wonder if this would be good with mango instead? I really don't like cantaloupe, and I know mango and cayenne can be very tasty. though would I have to change the amount of sugar?

What a weird coincidence: I just happened to have watched a Good Eats episode today for the first time in a long while, and it was an episode where Alton Brown made a cantaloupe sorbet as well! It must be good if my two favorite chefs are doing it.
