  • 1 box cake mix yellow or white or spice cake
    3 large eggs
    1 1/4 cup water
    1/2 cup vegetable oil
    15 oz. canned pumpkin puree
    2 teaspoons pumpkin pie spice
    1 teaspoon vanilla extract
    Streusel Topping
    3/4 cup flour
    1 stick of cold butter cut into cubes
    3/4 cup light brown sugar
    1 teaspoon pumpkin pie spice
    3/4 cup finely chopped walnuts or pecans
    In a food processor or a good blender were going to make the streusel topping.
    Add flour, cold butter cubes, brown sugar, pumpkin pie spice all in the food processor and pluse till all combine like course crumb pieces, then stir in by hand the nuts, and set aside till we need it.
    Preheat oven to 350 degrees. Spray a 9×13 baking dish with non-stick spray.
    In a large bowl add the cake mix, eggs, water, oil, pumpkin, pumpkin pie spice and vanilla and mix well using your electric hand mixer till everything is well combined.
    Pour the batter into the prepared baking dish and sprinkle the top of the batter all over with the streusel topping you made.
    Now put cake in the oven and bake till done. Mine took about a hour to get done.
    Serve warm or cold. Store in the refrigerator.
