I like making a chicken and broccoli casserole that my grandma taught me. Now, I make it a little different from what she did.. I combine a sleeve of crushed up Ritz crackers, cheddar cheese, and a little melted butter and sprinkle it on top. Some ingredients I put in mine are are mayo, mushroom soup, and water chestnuts. You'd be surprised what water chestnuts will do to a casserole like this. Really good! 😊

I know this as Chicken Chip Bake! I found the recipe in a Better Homes and Garden cookbook from the late 70’s! I toast the almonds for a few minutes and it makes a world of difference! Below the chips I add more cheese,m because why not! A family favorite in our home!!
Always made this by adding the Campbell's cream of chicken soup - undiluted, with less mayonaise - 1/2 cup, and instead of the almonds, use a can of rinsed, diced water chestnuts. Cook 30 mins. to soften & cook the celery more, and the crunch is in the water chestnuts. Yep, also love those potato chips too.

i have made baked chicken salad for YEARS - i use half mayo and half cream of chicken soup and top with some crushed potato chips and chopped pecans or slivered almonds -
I also like making a chicken salad, served chilled. I put grapes in mine. I just the combination of chicken and grapes, along with the celery and onion that I put in mine. I'm not much of a bread eater, but I like to spread it on some crackers.
@@pammccabe7535 Cut up 3 or 4 boneless chicken breasts and cook with a 1lb bag of chopped frozen broccoli in chicken broth till done. You'll have a little liquid left over, and that's fine. Put in a large mixing bowl and add a small can of water chestnuts and a jar of diced pimentos (drain both of these before you put them in the chicken. Separate bowl mix 1 can cream of mushroom soup, bout 1/2 cup mayo, juice of 1/2 lemon, and bout a cup or so of shredded cheddar cheese. Mix these very well and then add to the chicken mixture. Mix everything together and put in a 13 x 9 pan. Top with the cracker mixture I mentioned in my comments and bake at 350° for 30 minutes or its good and brown and bubbly. Enjoy. The measurements are a guess, but you can adjust the ingredients according to your taste.

I know in our Texas Walmarts a Rotisserie chicken is only 4.50!!! Can you believe that? I don't think you can buy a raw chicken for that! they have Garlic or Lemon pepper or Reg. I saw a young guy filing his basket with them , as they mark them down every night half price. He said he freezes them and he eats them for every single meal!! lol that is all he ever eats! He said he eats so cheap. He goes in the mornings and gets all they have {8) or so.... the marked down ones and he never gets tired of it. lol had to share that, I thought it was so cool that a young man would live that way. love & best dishes from Texas xoxo

Paula, have you ever cooked chicken in the crockpot? You won’t need to use a rotisserie chicken, it cooks up soooooo juicy and tender, it shreds with a fork sooooo easy! Way better than boiled chicken! 🤗

This is a great idea...one meal dish. Never heard of a Hot Chicken Salad Casserole before. I'm from So Cal and the folks out here on the left coast don't know much about a good casserole unless it begins and ends in vegetables. I love my veggies but... Maybe adding some white or green onion (I need a little onion) and a can of diced Green Chiles? Thank you Paula...you're a hoot!!
It's a favourite meal for all kids - think it's the crushed crisps on the top ! We use cheese and onion variety for a nice flavour. We would add a can of condensed mushroom soup to it for a creamier sauce for a change, and some parboiled broccoli florets 🙂

That hot chicken casserole looks so good. I make a corn casserole, using your recipe, that always gets rave reviews and requests for more...and if I take it to a potluck or other gathering, I ALWAYS come home with an empty dish. It is that good!
Paula can you please do a video on your cheese squash casserole? 🙂🙂 I have carpal tunnel issues, which hurts a lot. I have found when I need to shred any meat, the hand held or the stand mixers are amazing! It does it quickly and no pain.

I make a 9x13 pan with 1 bag cooked wide noodles, 2 cans tuna drained, 2 cans cream of mushroom soup mixed with 1/2cup milk and a couple slices of butter,1 can of peas drained. Mix together and spread in pan. Cover generously with crushed potato chips. ( I always save the crumbs from the bottom of every bag and keep in a bag in freezer . PS sour cream and onion chip crumbs are a great topping and breading for frying. )
I'm like you Paula I'm not too big on casseroles certain ones. I'm on the Keto diet, so I would use keto mayonnaise like avocado oil based. I'd swap out the potato chips with pork grinds!! 😱 Then on a cheat day I'll make the original recipe ❤️🙂

what a variable dish!! you could swap any cheese ya like and any chips ya like if u wanted!! it looks so yummy and a quick recipe to make too!! that be good after thanksgiving using leftover turkey instead of chicken... have a nice day deen fam!!
That hot chicken casserole looks so good. I make a corn casserole, using your recipe, that always gets rave reviews and requests for more...and if I take it to a potluck or other gathering, I ALWAYS come home with an empty dish. It is that good!

I have carpal tunnel issues, which hurts a lot. I have found when I need to shred any meat, the hand held or the stand mixers are amazing! It does it quickly and no pain.
This sounds absolutely delish. I always use potato chips as the topping on my tuna noodle casserole. It ain't right without them!!

I hate to ask but I grew up with my Mom making it and it was delicious but I hesitate to make one because I don't know which recipe is the best! And, I really would love to have some! I'm 62 and have not had any in probably 45 years, Ugh! :)

I make a 9x13 pan with 1 bag cooked wide noodles, 2 cans tuna drained, 2 cans cream of mushroom soup mixed with 1/2cup milk and a couple slices of butter,1 can of peas drained. Mix together and spread in pan. Cover generously with crushed potato chips. ( I always save the crumbs from the bottom of every bag and keep in a bag in freezer . PS sour cream and onion chip crumbs are a great topping and breading for frying. )

I'm like you Paula I'm not too big on casseroles certain ones. I'm on the Keto diet, so I would use keto mayonnaise like avocado oil based. I'd swap out the potato chips with pork grinds!! 😱 Then on a cheat day I'll make the original recipe ❤️🙂
