  • Katsudon is a Japanese pork cutlet rice bowl made with Tonkatsu, eggs, and sauteed onions simmered in a sweet and savory sauce. It's a one-bowl wonder and true comfort food!

    INGREDIENTS
    ½ onion
    1 green onion/scallion (for garnish)
    3 large eggs (50 g each w/o shell)

    2 servings cooked Japanese short-grain rice
    For Katsudon Broth
    1 cup (240 ml) water
    1 dashi packet
    2 Tbsp mirin
    2 Tbsp soy sauce
    2 tsp sugar

    Made this on April 8th while in Richardson TX when we went to photograph elipse. We brought my daughter, her boyfriend (whom we don't know well but thought this was good chance to get to know him), went to stay with my son. After photos (we set up their cameras and brought everything needed and they got great pictures), I had everything prepared to make Tonkatsu (your recipe). Everyone took a piece of the cooking from cutting, me directing and cooking, table set, etc. Your recipe was a great hit. Only change is I used air fryer (less oil) to cook cutlets. Everybody loved it! Thank you for a very special recipe for the end of a great day! Daughter asked for it, and it has been passed on.

    This made me cry. When I was a student in Japan, 1986-87 in Nagoya, I used to get this almost every day for lunch. The scent alone brings back so many memories of that magical year in Japan. Seeing you cook it perfectly is a joyful thing. So many restaurants do it the wrong way, but you have done it perfectly. Thank you.

    I think my mother used to make this on occasion. Sadly, I now live rural but the next time I'm in the big city I will ask my mother if this is what I remember as a child. Mmm... just thinking about this is making me hungry!

    This is my absolute favourite!!!!
    I already have a recipe, based on an oyakodon recipe, and I use chicken schnitzel from the supermarket, because it's easier.
    I'm sure yours tastes much better though!

    Awesome!! I make this dish for my family all the time. We add mushrooms and cook it with the onions! I always have such a hard time keeping the breading on the Tonkatsu tho. This really looks beautiful!

      Wonderful! Hmm about the breading... maybe you are over-simmering? You just need to reheat it. If you don't care about breading absorbing the broth, you could reheat separately before adding to the broth. Then add to the broth at the same time you do the egg. 🤗

    My wife LOVES Kastudon. I have been using a recipe from Tsuji's book "Japanese Cooking: A Simple Art" for years. Your recipe is pretty much the same. I use a special pan very similar to a donburi pan for individual servings. May I ask what the spice was that you used at the end of the video? It does not look like Shichimi Togarashi (Japanese Seven Spice).

      It is Shichimi Togarashi. 🤗 You have a oyakodon pan! I have it too, and used it for my other recipes to show how to use it. It's a lot easier to slide the food over the rice with the oyakodon pan!

    I have food allergies(soy, nuts and fish based produces) but still want to know what alternatives like for the soya sauce I could use to make this katsudon as i have been trying to cook Japanese foods and other cuisines for my mother and myself to have dinner together.

      Have you tried gluten free soy sauce (Kikkoman has it too)? It tastes almost like regular soy sauce. 🤗

    When I had katsudon in Japan, they had a fried soft boiled egg on top. Could you show a video on how to do that too?

      @@justonecookbook No, the egg looked to be peeled and lightly breaded on the outside, maintaining its original egg shape while still being soft boiled. its been about 4 years, but I believe it was in Oita station mall in oita Japan. My kanji is still weak with names so I can't remember what the place was called.
