    I remember when chef san got into that accident in Tokyo, I was so scared for her. she's such a good person, and she only deserves the best. im so glad she was able to make a complete recovery and get well.

    Dear Chef, Thank you for this recipe. Definitely a family favorite now. The other day I needed to use up a block of tofu (medium-firm). I marinated it in soya, broth, onion and garlic overnight. I was going to make a simple stir fry but............ instead I breaded and fried it to replace the pork in this recipe. It worked out tasty.

    I am German and ate this regularily as an exchange student in the 1980s in Kyoto. Delicious! I wondered for a long time how to actually prepare the sauce until I found THIS receipe here. It tastes just like back then. 40 years later, meaning right now, I will prepare 4 servings of Katsudon for my family. They LOVE it too! Thank you so much for this video!

    Chef you look great! So wonderful to see you back and together with Francis again. As others have said, don't rush. Make sure you take care of yourself first. We all are eager for new recipes but we can wait as long as it takes for you to be 100% ready to cook again.

    I am very glad you are doing better, Chef! It is thanks to you that I have been able to cook again. I moved to another country with a very very small kitchen, and thought I would not be able to cook lovely food again, but after watching you and all you could to with your kitchen made me realize I could still cook, and I am so happy now!     You can skip the kombu or bonito stock powder but it will make the katsudon more delicious :)

    I've eaten Katsudon which I bought from Isetan supermarket. Never cross my mind to cook it at home. But, I will cook this dish this evening for my family. Thank you for the recipe.

    When I lived in Japan back in the 90's I did a lot of traveling around the country. Whenever I went into a shop, this was my go to comfort food. I loved it!

    Yuri Katsuki, katsu means to win and Yuri's fav food is the pork cutlet bowl (katsudon)... ohhh it makes sense now. :0 I applaud the writers for making that connection. YOI aside, this video was very detailed and clear, I'll try making this soon! :)

      don means rice bowl, and tonkatsu means pork cutlet. However, katsu can also mean to win in addition to cutlet

    Hi! I'd like to say a very big Thank You to Chef and Francis. When I first saw this video I wanted to make the food so much that I went out of my way to find a shop that sells Japanese ingredients. While I was searching I passed a deli that was looking for staff, and since I was looking for a job I went in and applied... and I ended up getting the job! I never would have found it if I hadn't been out looking for the ingredients for this dish. Thank You!

    I used to cook this by using the Katsudon spice on the box.,now I' m in US, couldn't find it. I'm very thankful for teaching us this from the scratch, can't believed how easy is it and more delicious!!! Thank you sooo much! My husband's happy he likes it a lot!!!

    The mixture of kombu seaweed and bonito dashi stock powder is often used :) There are several types of mirin. If possible, please find "hon-mirin" (real mirin) which has about 14% alcohol content. Sake shops might carry hon-mirin. The mirin that Chef often uses is not available outside of Japan ;)

      Some of it. The sauce can make the breading on the cutlet a little soft, so if the whole thing submerges in the sauce, it can get a little soft. Of course, that can also make the breading taste like the sauce, which isn't a bad thing.

    I make this ALL the time as a regular dish in my home. And I do it EXACTLY like this. All of these ingredients are SUPER easy to get...even wal-mart is starting to stock some of them. Like Mirin. It's soooooooooo delicious!!

      yes, you can really do any meat, but the most popular in japan is "ton" or "pork." When done with chicken, it it typically served with a thicker- more curry-like sauce.

      Oh god, yes. I don't eat pork, so I usually have chicken katsudon instead. just switch the pork with chicken katsu.

      Yes, but pork will always taste better, in my opinion. It's got a stronger flavour and a more tender texture.

      Anything will do. I've even had potato katsu when I lived in Japan, and even though it fell apart, it was still good. Meat will always be best, but it doesn't necessarily matter what kind of meat you use.

      the secret is the sauce.. the more the better.. and you have to eat it in a bowl.

      It might be blasphemy, but a good beginner trick is to bake the Tonkatsu instead of frying it. There are a couple good recipes, but I use the one from Just One Cookbook (despite how awful the website is to use). When I bake it, it turns out much juicier and more evenly done than when I fry it.

    The pork chop looked so delicious. I really liked your recipe and the steps you've shown. I usually baked it and never thought of fry pork chop with bread crumbs. And fry would save me more time than bake. Thanks for your crispy pork chop! Yum yum!

    of I missed the recipes, you inspire me a lot and I am happy you are getting better, now I am all hooked on sesami seeds, rice and seaweed and I do omurice so often that I am thinking I need a break from it just for the sake of eating something different for a change cause I couldn't really get bored of it, how I wish it was easier to find things like yakisoba noodles, hard to be out of Japan and liking Japanese food
