I was going to make a simple stir fry but............ instead I breaded and fried it to replace the pork in this recipe. It worked out tasty.

I used to cook this by using the Katsudon spice on the box.,now I' m in US, couldn't find it. I'm very thankful for teaching us this from the scratch, can't believed how easy is it and more delicious!!! Thank you sooo much! My husband's happy he likes it a lot!!!
The mixture of kombu seaweed and bonito dashi stock powder is often used :) There are several types of mirin. If possible, please find "hon-mirin" (real mirin) which has about 14% alcohol content. Sake shops might carry hon-mirin. The mirin that Chef often uses is not available outside of Japan ;)
Some of it. The sauce can make the breading on the cutlet a little soft, so if the whole thing submerges in the sauce, it can get a little soft. Of course, that can also make the breading taste like the sauce, which isn't a bad thing.
I make this ALL the time as a regular dish in my home. And I do it EXACTLY like this. All of these ingredients are SUPER easy to get...even wal-mart is starting to stock some of them. Like Mirin. It's soooooooooo delicious!!

It might be blasphemy, but a good beginner trick is to bake the Tonkatsu instead of frying it. There are a couple good recipes, but I use the one from Just One Cookbook (despite how awful the website is to use). When I bake it, it turns out much juicier and more evenly done than when I fry it.
