BEEF NOODLE SOUP or The Soup with Thousand Flavour is one of the greatest noodle soups in the world. Here is the easy simple recipe (in English and French) for you to make a delicious PHO at home. The broth is infused with Vietnamese Spices like cinnamon, star anise, ginger and cardamom... How good it is a big hot bow of PHO with a bit of chilli, lemon juice in cold weather !

RECIPE for 3
Ingredients
Aromatics: 1 large onion halved, 100gr ginger
Spices: 5 star anise, 2 cinnamon quills, 2 cardamon pods, 2 cloves, 1tbsp coriander seeds
Beef Bones: 1kg beef brisket, 0,5kg meaty beef bones (leg, knuckle), 10 cups water
Seasoning: 1tbsp white or rock sugar, 3 tbsp fish sauce
Noodle Soup per Bowl: 30gr dried rice sticks (cooked in hot boiling water), 20gr beef tenderloin, raw, very thinly sliced, 3 basket slices
Toppings: beansprouts, Vietnam basil, coriander, lime wedges, finely sliced red chilli, chilli sauce
Making Broth
Bring water to boil
Add bones and brisket
Add onion and spices (char onion and ginger, toast spices)
Simmer 2 hours or a bit more
Remove brisket, should be fall-apart tender, cool then refrigerate for later
Simmer remaining soup (uncovered for 40 minutes)
Strain broth into another pot, discard bones ans spices
Seasoning with fish sauce and a bit of sugar if needed
Broth should be beefy, fragrant with spices, savoury and barely sweet
Assemble
Prepare rice noodles per packet, just prior to serving
Place noodles in bowl. Top with raw beef and brisket
Ladle over hot broth with cook beef to medium rare
Serve with topping

RECETTE pour 3
Ingredients
1 grand oignon, 100gr gingembre
5 badianes (étoile d'anis), 2 baronnets de cannelle, 2 cardamomes noires, 2 clous de girofle, 1 c. a soupe de graine de coriandre
1kg environ de plat-de-cote avec os, 0,5kg jarret de boeuf, 10 cups de l'eau
1c.a soup du sucre, nuoc mam 3c. a soupe
30gr de vermicelle de riz par personne
les herbes aromatiques comme menthe, coriandre, citron, piment ...
Bouillon
Porter l'eau a a ebullition dans une grand marmite
Ajouter les os et jarret
Mijoter au minimum 2 heures, écumer régulièrement
Durant ce temps, faire griller dans le four ou dans une poêle l'oignon, gingembre et les épices, puis ajouter les dans le bouillon
Sortir la viande quand elle est tendre, mettre au frais
Saisonner avec nuoc mam et un peu de sucre
