emperor could not have same food often, so it was usually hard for the emperor to have a favourite food as it carried the risk of people poisoning the favourite food. there was always a new rotation of the dishes that came out. the modern day royal cuisine is a collection (normal meal even for the emperor did not exceed 12 dishes) of what the seonbi (the upper class academics) ate with alcohol.
they had that, it was one of many procedure that was in place to stop attempts at poisoning. like all alcohol was made by a select few people, ingredient and its growers were hand picked and only grew produce for the king and such.
corncerial also, how much of the Emperor's food was chosen by the imperial doctors? I know they even had hot and cold (health, not temperature) foods to match temperament. and of course aphrodisiacs and birth control foods! way ahead of their time
If youre reading this, and you hate brocoli, keep in mind that u probably ate a shitty made one, because there are ways to cook brocoli that makes it taste fabulous
Tacio OB im a chef and I hate broccoli too, ive cooked it every way conceivable and my hate for it hasn't changed!!.....the one time I enjoyed it was when it wasn't on my plate
*laughs* I was sitting here watching this, having just had dinner, .... and yeah... totally was like "Can I have some of this? I'll even eat the broccoli!"
I'm a light eater too. My plan? I'll bring friends. We'll buy one of these huge multi-course meals, split the food, split the bill, all enjoying a taste of each dish.
Tasted many Korean foods whenever I go back there, but never ate like the Kings before...jealous~~ Btw, I admire your courage to dress in Hanbok and walk on the streets and the restaurant lol
Korean royal cuisine is also known for it's rather restrained flavor. They cook the food by gentle heating to keep the food something the emporer could eat everyday without being possibly upsetting to the stomach. That's why things aren't cooked til they're browned. And the food is mostly kept mild in spice.
@7:52 you see a picture of a king and 2 GiMiSahngGoongs. They are higher-ranking court ladies (King's maids) who wait on King during his meal. The most import job of Gimisahnggoong is tasting every food on the table before King gets to eat any of it to make sure they're safe to be consumed by the king.
Hey Mike! The chap jae is not glass noodles. It's sweet potato noodles. Glass noodles will be very thin and white. These noodles are very fat. Delicious!!!
Love watching your food & travel videos! You are one of the few travel vloggers that I follow coz of your love of food & positivity. Keep up the excellent work!
This video reminds me of a Korean historical drama I used to watch called Jang Geum about Korea's first female physician, who started out as a cook for the emperor
If I were Emperor, my first law would be Broccoli bust be eaten at leat one meal per day. But you, Mike, would have to eat it in three meals per day!! Muahahahaha
I don't think Mike doesn't like broccoli personally. He ever said that broccoli is not asian thing, so chinese food that has broccoli in it is not an authentic one. I guess the same thing goes to Korean authentic food too . As in Indonesia, there is no traditional dishes with broccoli (at least where I am from, South Sumatera )
Broccoli was cultivated in Italy and France so there's really no reason why it should be showing up in Asian dishes that're supposed to be traditionally and historically authentic. Makes you wonder what else they're serving isn't actually what a Korean highborn would've eaten. 👀
Laith During the joseon period, trade was opened up to the west and numerous things were sent back to Korea, it’s possible broccoli might’ve been something that made its way over. I can’t say for sure since I haven’t done any specific or in-depth research on the subject however.
@@時岡さなえ Oh, you mean like the average Japanese citizen has no idea of what Japanese history is like in the early 20th century? The millions of people killed by the Japanese military in the most inhumane and disgusting ways, and they don't teach that in school... that kind of fabrication, you mean?
The original recipe probably used Gai Lan or Chinese Broccoli- more stem, fewer florets than European broccoli. It was introduced to eastern cuisine by the Portuguese, at the same time as chili peppers. (Can you imagine pre-chili flake kimchee? It was a thing!)
Eat your broccoli! It's good for you! The funny factoid is that broccoli was actually introduced to Korea from the Mediterranean - couldn't have been traditional for emperors.
That is so much food. OMG!! I would like to try to eat a 9 course meal! I want that 9 or 12 course layered seafood thing you did a video with all those friends. Now that's my jam there. SEAFOOD... YES!!!
I like broccoli Japanese tempura style. the stems and tops are cut bite-size, marinated in combo of soy sauce, sweet rice wine vinegar (Aji Mirin yummmm) tossed with toasted sesame seeds, then tempura battered and quickly lightly fried. *to die for*
Oooooh myy gosh! sooo funny! lol! that dessert looked like the texture of mochi! so cool and so yum! i'm glad i saved this for the last food video lol! loved it!
Actually, it's called dduk galbi because they make it like they would a rice cake, by pounding on it. It's basically ground beef that isn't ground so fine as what we know as ground beef.

I tried this in Korea. It was expensive but well worth it ! Taste and quality was fine dining level ! Highly recommend

broccoli with mushrooms and shrimps in butter taste like heaven!! broccoli is actually savory like potato if you know how to cook it well

Hey,Mike This is your best video ever.
So peasants eat broccoli? I thought that vegetable is expensive lol
Sarah Skyler Bucu it's not expensive here in America
lucky you, it is in the philippines. but broccoli is gooooood

The broccoli would give some color more than anything else
Broccoli is actually very huge and grows fast. So I don't think it would be expensive at all. It's easy to grow too.
Love your videos, love to see all of the different food dishes and you are hilarious 😂
I am in Kyoto now full on Ramen and dumplings! China next but I will do Korea one day! 😘
I love your sense of humor!
LOL come for the food, stay for the personality
If anyone is curious about the Korean movie in the picture when he was talking about the Imperial Food Taster/Tester, that's The Masquerade.😄
Copper changes the flavour of the food?
Xrod Gaming Yea copper has a different color when when burned
Not to mention that copper can get contaminated with verdigris, which itself causes ptomaine poisoning, so...
Xrod Gaming But copper poison would sweeten the food and wine, which is why the ROMANS would use it so much
Who's idea was it to say let eat this hard thing from a cave
Its brass
Oooooh myy gosh! sooo funny! lol! that dessert looked like the texture of mochi! so cool and so yum! i'm glad i saved this for the last food video lol! loved it!
So wrong about Dduk galbi! There's no rice cake inside that meat! It's called Dduk galbi 'cause it looks like a square rice cake, Mike!
