On my first visit to Paris in 1990 I had lunch at L'Arpege. I think it had a single star back then, and the meal featured fish as an alternative to the vegetable menu.
No way! I wish I could go back in time to experience how it was back then! Even though I tried few other 3 stars, I believe Arpege is still my favourite!! I was your experience 20 years ago?

Hi! Mmmmmm...all the food looks amazing! Knowing we won't be in Paris in our lifetimes, we wish that we could buy some recipes from the chef! We did see his book is available, but there are only 15 recipes in it. Also, we cannot eat multi-course meals. It is just too much food at one time. If we could spread the meals over the day or two days, that is ideal.
I know he wrote a book called "the art of cooking with vegetables" which should have around 40 or 50 recipes in there. I do agree with you about too much food at one time...all the top restaurants we have been always feed us so much food I think they don't want people complaining of still being hungry with all the money spent. To divide it in couple meals would be perfect!!
Thank you so much Lucy. We are very active, always keep ourself busies with something to do, walk or exercise daily. Also I think the food in Europe is generally lighter and less processed. Where in the States are you from if I can ask?
@@chefonajourney Thank you very much for your reply! I'm in Northern California, north of Sacramento. I think you're right about Europe having less processed food than America. Food additives that are not allowed in European food are allowed here. We tend to eat fast, go to mediocre chain restaurants, eat processed food. Not everyone is like this. Not everyone here is overweight. But obviously this is a huge problem here. You have to actively work at eating more whole foods and finding fresh fish and meat that is good quality and not super expensive is hard. America has a major eating disorder I think in that our relationship with food is not good. We either really restrict calories, do like keto, low carb, no fat, no sugar etc, until we can't do it anymore, then binge on junk and gain everything back or use food to cope with life. I think most of us are aware this is a big problem. We are in awe of you guys and your relationship with food and staying a healthy weight. It's really admirable! Thank you again for your reply! I enjoyed your video but I really wasn't impressed by the food at passard. You didn't mention the cost and no doubt it was astronomical....scary prices. Please show the menu at the beginning of your movies. Also the bill... it will be a good way to show your viewers what to expect if they ever visit. Thanks and keep up the good work. I am new at long format and there are so many things I need to improve so I truly thank you for your suggestion ❤️ To be honest I enjoyed Passard's food way more than other 3 or 2 stars restaurants I have been but the price wasn't in any way cheap of course. I think it's still affordable if you go for lunch though, and you make sure to don't order anything extra from the a la carte menu. (those two plates of chicken were about 200euros -.-" )
