  • How to make the most delicious Basil Pesto Pasta. It’s tasty, easy, cheap, healthy, fresh, fragrant and full of flavour. This recipe is definitely a must-try. Please enjoy!
    Serves - 2
    Ingredients -
    2 Cloves - Garlic
    15g - Parmesan Cheese, Freshly Grated
    15g - Pinenuts, Untoasted * See note down below
    45g (1 Bunch) - Basil Leaves
    3 Tbs - Extra Virgin Olive Oil
    1 1/2 Tbs - Sea Salt (1/2 Tbs for pesto, 1 Tbs for pasta water)
    1/4 tsp - Ground Black Pepper
    250g - Spaghetti or Pasta of your choice
    Parmesan Cheese and Basil to serve.
    Note* - I have used untoasted pinenuts. You can toast these if you prefer. It adds an extra nutty flavour to the pesto. To toast, place the pinenuts on a baking tray and place in a preheated oven set to 180.C or 350.F and toast for 3-4 minutes, until lightly golden. Add to the blender as per usual.

    Thank you so much. I am going to try this with chicken. This is much healthier than some of the other recipes that call for heavy cream. I can't wait to make it. I just need to buy a food processor to blend the ingredients to make the pesto.

      How do you add your shrimp? Is it boiled or cooked in any specific way?

      @@hxsm8090 no not really. I just added my favorite seafood seasoning, some pepper, and some thyme (don’t add salt, shrimp is salty by itself, it doesn’t really need it) and cooked in over the stove with some canola oil until it was pink on both sides.

    Ha ha! I typed Basil Pesto Pasta and see how it is done and YT recommends this video and I am amazed to see it was your video, Chef Jack! Now I got this recipe, I am really ready for tomorrow's Basil Pesto Pasta! And thanks for the tip on not reheating this kind of pasta since it turns black and looks not appetizing (for the magazine-look picture) but as you said as long as the yummy and rich flavor is there, looks doesn't really matter much!     For years I've watched Italian cooks make pesto and pasta. I was intrigued. So I finally made this recipe.
    I was disapointed. I don't like basil or pine nuts. So now I know. Lesson learned. Worth a chuckle!!!!!

    Just hoping if it is possible to get your explanation about the reason the dish is called "pesto" (something like the key ingredient or certain technique involved), and also explanation in other dishes as well. It helps me a lot in learning process. Thanks.

      I’m glad you enjoy the content! The word pesto originates from the Genoese word pesta, which means to pound or crush. The original and authentic way to prepare this is in a mortar and pestle.

    Do you buy fresh herbs every time? If not, how do you store them to last longer? Can you do a video on that?

      I buy fresh herbs every time. I wrap them in a damp kitchen cloth and then wrap them with plastic wrap. I store them in the fridge for up to 4-5 days. They stay really fresh. I will add these details in future videos 😊

    But thanks for the measurements in grams though! I wonder where one could buy pine nuts, though 🤔
    They don't seem to be in the same aisle as walnuts and hazelnuts.

      Haha! I try to accommodate all units of measurement. Sometimes it’s better to say 1/2 tsp or 1 tsp other than 0.5 grams or ounces as most scales don’t even read that amount. Pine nuts should be in the nut section with walnuts and hazelnuts etc. If you cant find them this pesto works just as good with almonds, cashews, macadamias, peanuts and walnuts. 😊👌

      @@ChefJackOvens Ah, yeah, but what I mean to say is that in some parts of the world, the very concept of teaspoon and tablespoon doesn't exist. In my country, we use "soup spoons" and "coffee spoons", but they're not even equivalent to tsp and tbsp in terms of quantity 😔
      And I'll try pesto with those other nuts, should give some interesting flavours!

    If not good to heat pesto, what if it’s coming out of the fridge? Wait til it’s room temp as the pasta water wouldn’t heat it enough?

      You can use it out the fridge. It will cool the pasta down slightly but this dish is great cold as well. When I say it’s not good to heat pesto or basil, I mean don’t cook it, as long as you don’t add it to the pan whilst it’s still on and only mix it into the pasta once it’s off the heat you’ll have no problems at all 😊

      Did you blend the stems too? If it’s chunky your blender might be struggling and you may need to remove some and do it in batches

      You can substitute for any other nut or leave it out all together 😊

      You can leave them out. If you’re able to consume other variety’s of nuts, walnuts and macadamias work really well too

    Definitely use less garlic. 1 clove will suffice. Mine was much too garlicy with 2. Garlic is such a high impact seasoning. Kind of disappointing overall. I’ll try it again sometime with just 1 clove and more basil leaves. I used a tad less basil than recommended so the taste of the oil and garlic really came through heavy. Added some heavy cream to lessen the spice but it drowned the basil flavor too some.

      You can substitute them for pistachios peanuts, macadamias, cashews or my personal favourite walnuts. 😊

      I sincerely apologise for the late reply. The brand is "Singer" and it's a professional hand mixer with a processor attachment.

      They add texture helping to ground down the basil also adding amazing flavour. They can be substituted with any nut really. Pine nuts are quite expensive
