    I really wish you had linked a written version of this recipe. Did he only use duck fat, or did he mix in another oil?

    Anybody ever pay attention to how crazy he marinades his chicken? Those are like three dishes worth of garlic and ginger and like ten of sesame oil! I would really love to taste this

      He is not afraid, that's encouraging me to actually go hard on the seasoning next time. But I am wondering about using Edward Lee warm bath marination first then maybe first fry in oil then finish off in duck fat

    hell, we here in Mudzoory grew up eating fried chicken made by our mothers who grew up after the depression. i'm not even going to reveal any other secrets.

      I don't want them to say "good or bad" I want to let them describe it and see how much *they* who have tasted a LOT of great food, think about that. If they like I'll probably like it too and will try it.

    Sesame oil is pretty strong flavoured, and he put a ton of it in his marinade.

      I wonder if it was toasted sesame oil, the untoasted stuff is much milder. Even in Asia, Japanese sesame oil is milder than the Korean one, the Malaysian one is nuttier than either, etc, etc.

    it's more like a technique video. leave the tasting to someone like Guy F. you know this is going to taste like gold regardless and you don't need Ludo's O face as he eats the chicken
    othernews. Ludo is 45?! he looks like a 28 year old rockstar.

      Tri Troy Pardianto it’s the beeest bro you must try Ayam Penyet. It’s a fried chicken that they smash with a hammer, and the bones are so brittle you can eat it. Amazing.

    Indonesian fried chicken? not sure which version you talk about. yes it is twice cooked, but we indonesians don't steam the chicken, instead we boil them with herbs and spices. we call it ungkep indonesian. hope it helps clearing up confusions.

      Some of indonesian fried chicken using steam process before you fry it. Maybe you should try the technique sometimes. The herb and spices we use were amazingly become more fragrant after you fry it. Try to marinate the chicken with the spices before you steam it for at least 1 hour. And then steam it for about 45 minutes the you can fry it.

    Jonathan Gold looking pretty dumb in this segment. His statement at 1:35 and Ludo's face at 1:43 pretty much sums it up. Los Angeles is not the only place where you can be "whatever you want to be"... just let me watch a video about delicious chicken without getting annoyed.

    but won't the fried starch be all soggy when you let it aired for couple hours. I prefer flour and rice flour.
