I wonder if it was toasted sesame oil, the untoasted stuff is much milder. Even in Asia, Japanese sesame oil is milder than the Korean one, the Malaysian one is nuttier than either, etc, etc.

Tri Troy Pardianto it’s the beeest bro you must try Ayam Penyet. It’s a fried chicken that they smash with a hammer, and the bones are so brittle you can eat it. Amazing.
Indonesian fried chicken? not sure which version you talk about. yes it is twice cooked, but we indonesians don't steam the chicken, instead we boil them with herbs and spices. we call it ungkep indonesian. hope it helps clearing up confusions.
Some of indonesian fried chicken using steam process before you fry it. Maybe you should try the technique sometimes. The herb and spices we use were amazingly become more fragrant after you fry it. Try to marinate the chicken with the spices before you steam it for at least 1 hour. And then steam it for about 45 minutes the you can fry it.
Jonathan Gold looking pretty dumb in this segment. His statement at 1:35 and Ludo's face at 1:43 pretty much sums it up. Los Angeles is not the only place where you can be "whatever you want to be"... just let me watch a video about delicious chicken without getting annoyed.

but won't the fried starch be all soggy when you let it aired for couple hours. I prefer flour and rice flour.
