Thank you chef John! A few years ago I lost a job. Instead of being a good boy and getting another job I took some time to learn how to cook for my family. Mostly by watching your videos. Eventually I started my own business. (not food related) But I've never stopped cooking for my friends and family. This year, for my birthday, I cooked all day and fed a neighborhood in Portland with mostly your recipes. (grandma's apple pie slipped in) Thank you for changing my life. I've been following this channel for almost 5 years now. Linking your voice with an actual moving picture of you and just seeing the kitchen where all the cooking happens... it just made me euphoric. You really made my day. :) PS. For all the people saying he only cares about money for trying to double the profit, well, he's trying to make a living! I'm sure that editing the blog is a lot of work as well. Plus, it's not like he doesn't deserve it. I actually think it's really smart of him. I don't think I've ever used exact measurements myself, so I totally get the "when it feels right" instructions. There are lots of times when I ask what everyone wants for supper and someone (in my family, I don't hear random voices...I think) suggests we "see what Chef John is making". Chef John is absolutely right. I'm a restaurant chef myself and yes... it is incredibly hard, low paying, and stressful. The servers and bartenders do seem to have much more fun and make loads more money.
Yep. I only did it for five years when I was young…pot washer, cook, waiter, and bartender, and I knew that I was never going to make a life long career of it. It was good because it was something where you could always make ‘support money’ while in school or on your way to where. But….everything they say is true, it’s hot, hard, sweaty, and the temptation to drink too much after hours is always in front of you. The camaraderie amongst the workers is truly a good thing and to be an owner and run the place usually means you will not be part of that club. It’s not easy being boss. I never lost the love of cooking food though and have maintained it for these many decades.
People like the videos not because of the camera angle or the shooting technique or that they can "cook with you" or something like that. People like your videos because you're awesome. Because the recipes are good, because your sense of humour, because you're not too serious about too many things and you don't force people to buy exotic ingredients that they never going to use again. Because everything you cook looks like an easy upgrade of something our grandmas would cook. People love your videos because you're awesome! At least that's what I like about the videos.

You definitely don't have a voice for newspaper.(rimshot) You have such an upbeat voice that you inspire people to try the recipes that you show. I love the humor you inject as well. It just makes cooking seem a lot harder than some shows make it out to be. Just try, that's all you preach. And if things don't go as planned, don't give up.

John, your answer to the final question, (‘why no written recipe?’), is pure gold. All my life it has been the way I’ve learned to cook. (Well….baking is more recipe driven.) But you watch, you do, you take notes, you do again, and eventually you make it your own. A movable feast is much more interesting than a wet lettuce leaf.

Love that focus is on the ingredients, cutting board, bowl, pan. No matter how casual the recipe, there's always something to glean from Chef John, he is versatile, has loads of variety, is stringent where the dish needs him to be, and offers advice on variation when there is room to do so. He is simply professionalism brought to the people. Chef John is that rare, golden combination of being excellent at both his craft and teaching this craft to others. While I'm glad you aren't in the recipe videos (I agree with your method, I like being captivated by the food alone), I really enjoyed seeing you in person in this video. I've always loved your deadpan humor, but I often imagine that you're cracking up under your breath. You proved me wrong in this video, though...you keep a completely straight face during your jokes, and I think that's awesome.
Just type in Chef John in youtube and you would have seen him way earlier..he did an dozen of interviews on other channels. Lookup "Sizzle reel - Cant boil water"..i wonder why it never made it to a tv show =)
I like the answer to the last question because that I how I use Food wishes videos - watch it, get inspired, adapt, make mistakes, adapt again, toss out what doesn't work (for me), and make it work. Or I mix and match. For example, I watched the video on country gravy, and the Thomas Jefferson Mac & Cheese, and mushed the two together for "Macaroni and Country Gravy".
Chef, you should consider the Amazon Associates program as well if there are some products on Amazon that you use in the kitchen. I'm sure lots of us would love to be using the same tools as you are, and you can earn about 10% of the cost of the items through your referral!

That was awesome! If you knew him, and you should by now if you've been watching for awhile, the money part was mostly tongue and cheek. Truth is he loves what he is doing, he's very good at it, and we don't pay one cent! What's to criticize about that?
I think he's straight up honest when he tells that if he can make money twice, he'll make money twice and that making money is important for him. I don't think there's a shame in telling the truth. I also go to work first and foremost to get paid. I love the work, but without the pay I wouldn't be able to live! Chef John really relies on making his money by making these videos. It's nice that cooking also happens to be his passion!

Thanks for making me "the best cook" in my children's eyes. I'm a stay at home dad with 2 kids & a wife to cook breakfast, lunch and dinner for. It took me a while to decide to grow up and be a man, but having kids will do that to a person. You definitely don't have a voice for newspaper.(rimshot) You have such an upbeat voice that you inspire people to try the recipes that you show. I love the humor you inject as well. It just makes cooking seem a lot harder than some shows make it out to be. Just try, that's all you preach. And if things don't go as planned, don't give up.

I love the format, wouldn't want anything to change. I don't miss the amounts or measurements - rarely need them for other than baking, but then I go to the blog. Love that focus is on the ingredients, cutting board, bowl, pan.
No matter how casual the recipe, there's always something to glean from Chef John, he is versatile, has loads of variety, is stringent where the dish needs him to be, and offers advice on variation when there is room to do so. He is simply professionalism brought to the people. Chef John is that rare, golden combination of being excellent at both his craft and teaching this craft to others.
Only question I have is: Who cooks for Chef John? Him being as likeable as he is, I hope it's a really nice person!

While I'm glad you aren't in the recipe videos (I agree with your method, I like being captivated by the food alone), I really enjoyed seeing you in person in this video. I've always loved your deadpan humor, but I often imagine that you're cracking up under your breath. I like the answer to the last question because that I how I use Food wishes videos - watch it, get inspired, adapt, make mistakes, adapt again, toss out what doesn't work (for me), and make it work. Or I mix and match. For example, I watched the video on country gravy, and the Thomas Jefferson Mac & Cheese, and mushed the two together for "Macaroni and Country Gravy".

That was awesome! If you knew him, and you should by now if you've been watching for awhile, the money part was mostly tongue and cheek. Truth is he loves what he is doing, he's very good at it, and we don't pay one cent! What's to criticize about that?
I think he's straight up honest when he tells that if he can make money twice, he'll make money twice and that making money is important for him. I don't think there's a shame in telling the truth. I also go to work first and foremost to get paid. I love the work, but without the pay I wouldn't be able to live! Chef John really relies on making his money by making these videos. It's nice that cooking also happens to be his passion!

Thanks for making me "the best cook" in my children's eyes. I'm a stay at home dad with 2 kids & a wife to cook breakfast, lunch and dinner for. It took me a while to decide to grow up and be a man, but having kids will do that to a person. Making your recipes at home with my kids, & watching my picky babies actually eat makes me feel so proud to be a father. Thanks for making it so easy and fun for people like me who have never cooked before feel like a pro.
