    I just made it and I'm seriously blown away!!! Through every step mine looked exactly like it did on the video (which never happens, lol). It was SUPER easy, very quick, created no mess (I hate how bread recipes mean your kitchen is covered in flour by the end) and tasted great!!! I'm a coeliac and all the GF breads in the supermarket's are made with combinations of rice, tapioca and potato flour - which is super fattening. Having made this I don't think I will ever actually buy bread again. Thanks SO much for sharing!!!

    I've tried many buckwheat recipes for breads, as well as other gluten free breads without and with yeast and this is the first one that rised this much and didn't have a ton of fillers like xantham gum that I didn't care to use. This turedn out great, so tasty and I didn't even add spices. Next time I will add some spices to see how it tastes.
    I used flax eggs instead of eggs (2 tbsp of ground flax mixed with 6 tbsp of water and let sit for 15 minutes to thicken) and coconut oil instead of vegetable oil in one loaf (the other i followed the original recipe). The one with the flax eggs and coconut oil actually turned out a bit stronger than the original recipe in this video. So anyone who is sensitive or allergic to eggs may want to try that. Both incredibly delicious!
    Lastly for anyone interested in not using yeast, if you actually mix 2 tsp of lemon juice with 2 tsp of baking soda it will act as yeast. You mix everything else first and than add this last. You don't have to let it rise before cooking it rises on it's own in oven. I have yet to try it in this recipe yet, but I plan to. I've tried it in many other recipes and it worked really well, it doesn't alter the taste a bit, I find in most recipes it works great and the bread still tastes very good. Just thought I would share with anyone who might be interested. After I try it when these two loaves are all eaten up, I will be sure to let you all know how it turns out, unless someone else beats me to it :). Good luck everyone enjoy this super recipe.
    Titli Nihaan, thank you so much for recipe very delicious best bread I've had in a while :).

    Thank you so much for this recipe. Simple, straight-forward and produces an excellent loaf. Works perfectly. I leave it to cool in the fridge overnight and then slice it up, add baking paper between each slice (to prevent sticking), and put it in a box in the freezer. Then I can just get out what I need each day.

    I just made this. I love buckwheat. It rose over the sides of my loaf pan. I like the taste. Even with the egg it's a bit crumbly but I enjoy it with peanut butter and maple butter...yum! I love that it's clean, no extras, no fillers, just flour...exactly the way food should be....pure and simple and nourishing. Thank you for sharing.

    Hi Titli, I love buckwheat, when I was pregnant with my son Joe, in 87, the very first craving I got was for buckwheat pancakes, I never tasted them before, but i just knew what they were gonna taste like, I made them, and they tasted just like I thought they would. Thank You so much for this recipe using just buckwheat flour, amazing! Woman rock! P.S. I know this video is a few years old, hope you well, please reply if you can, love to hear from ya, wishing you great holidays!

    I'm looking forward to doing this. I've been looking for ways to convert the standard white flour bread to a "healthier" alternative and this one looks great in that it doesn't use any of those exotic ingredients you mentioned. My standard bread recipe calls for mixing the yeast and sugar into warm water at 110 degrees F, and let it sit for 10 minutes, it ends up foaming up a bit and I think that's what helps it rise.

    This bread is delicious! Thank you so much for sharing it. Buckwheat has a lovely depth of flavour without being too granola-y. I must say though that I increased the salt to 1 1/2 tsp and a made a slurry of ground chia seeds and water ( 1 tbsp chia + 4 tbsp water, added to the add mixture) to help increase the moisture content.

    Seeing that my mother LOVES bread, but isn't very bakey and has diabetes (she can eat bread, but really restricts her intake because she doesn't want insulin). I've never made buckwheat or any of kind of bread because I wanted my parents to eat (my father is on the side of caution) and the ingredients had so many ingredients, like potato starch, tapioca starch, etc. It sort of lost it's purpose and even if it didn't, I would have to scour the globe for the ingredients. -o-
    But now, this is definitely what I'll do for my 1st loaf of bread! =) I hope it works out well...wish me luck!

    Hi Titli, nice recipe. I have already tried to make Gluten free bread for quite a while and it always came out as a dense brick ! Damn... Well , now reading here the comments and watching your video I probably know why. I had not used any eggs... just fresh yeast ( no dried yeast) in warm water with a bit braun sugar or sometimes also honey instead of sugar and buckwheat flour only.. Why do you use the vinegar ? is this to get the PH-Level right for the yeast ? Does yeast only grow in acid environment ? I also had the problem that the bread never rose up, so I always ended up with a dense brick... So now I will try your recipe and see, if I can get it to work finally. Many thanks. Regards, Stefan.

    • @TheBreadKitchen
      @TheBreadKitchen  9 років тому +5

      overunitydotcom Yeast prefer acidic conditions and the vinegar helps that. To give structure to GF bread you need to add something like eggs, xanthan gum, guar gum or psyllium husk. They help to trap bubbles in the dough and allow it to rise. You might like some other of my GF recipes... www.thebreadkitchen.com/recipes/category/breads-by-type/gluten-free/
