    Persian Lamb Neck/Shank Stew with Dill Rice
    Ingredients:
    Lamb Neck &/or Shank (1.5 to 2 kls)
    Cooking Oil
    2 Large White Onions Sliced
    2 Garlic Bulb, whole and Peeled
    Seven Spice
    Turmeric Powder
    1 Cinnamon Stick
    Saffron ( or Atsuete Powder as substitute)
    Tomato Puree/Paste
    Salt & Pepper to Taste
    Dill Rice
    5 Cups of Basmati Rice - Washed and Soaked in Water for at least 30 minutes
    Chopped Fresh Dill
    Salt
    Oil
    Saffron Water/Atsuete Oil
    Butter
    Mediterranean Salad
    Arugula Leaves
    Sliced Cucumber, Cherry Tomatoes, Figs
    Feta Cheese
    Pomegranate Syrup
    Procedure:
    Lamb Stew:
    Put small amount of oil in a pan and sear the meat on all sides and set aside.
    On the same pan, put the sliced onions and stir fry quickly to enhance the aroma.
    Add oil on the pan then put in the atsuete powder and stir quickly, set aside the atsuete oil.
    In a pressure cooker, put in the onions first, add the seared lamb meat, garlic, cinnamon stick, 2 tsps of turmeric powder, 2 tsps. of seven spice, salt & pepper. Pressure cook the stew in 45 to 1 hr. or you can also slowly cook it in low heat for 2 to 3 hrs.
    Chopped the dill finely. Set Aside.
    Boil water in a pot add salt, once boiling, add the washed basmati rice. Stirring occasionally, until the rice is halfway cooked, drained it and washed with water.
    In a pot, put a small amount of oil, half of the remaining atsuete oil and small amount of water, and make several layers of rice and dill. Make some holes on the rice then pour the remaining atsuete oil. Place some kitchen or paper towel before placing the lid. Continue cooking the rice on low heat till the rice is cooked and fluffy.
    Once the meat is tender, in a pan, put oil and tomato puree and stir fry it just to enhance the flavor, then add the stew and continue cooking it on low heat while adjusting the taste with salt/pepper, chilli flakes(optional). Once the sauce is reduced, you can now serve it hot with the dill rice and the salad on the side.
