    I am a professional cook with 40 years experience. My family is originally from Poland and Germany. You not only take me back to my childhood with every show but teach me so much about my people. Thank you so much. Oh, and silver skin on the bone side of the rib is not important only over dense muscle and more so in wild game like venison.

    Ribs in the U.S. are usually slathered with BBQ sauce or a spicy rib rub. This reminds me of doing a pork roast in a way. Very inventive!
    I like to make country style ribs in the slow cooker with cabbage, onions, celery, carrots and caraway seed. I like to brown the ribs, onions and celery first before I put it in the slow cooker with a couple cups of chicken broth, cabbage, carrots, salt, pepper and caraway.
    Those potatoes look fantastic!!

    Absolutely terrific cooking! Fantastic job, brought back a lot of childhood memories. My Uncle was Polish and his mother, Regina was a great cook, especially during the holidays. She was the best!!! R.I.P. REGINA.

    Thanks so much for sharing your recipes. I never know what to do with ribs. Cannot wait to try this recipe. In Canada it is popular to BBQ ribs….still looking for that fall off the bone recipe bbq style.

    My mom used to make back ribs with sauerkraut, mushrooms and onions. She would put this in a low oven (300 -325F) and let it cook until the ribs fell off the bone. It was so good! By the way, my Bigos turned out fantastic...very delicious and I have plenty to freeze for future dinners.

    Mom, in her 90's still makes these ribs. Oh, so, good. Might need to get her an immersion blender for her birthday.
    Whenever I made something with marjoram in it, my husband would ask if this was a Polish recipe.
    Marjoram is the flavour of Poland.

    I'm a BBQ / smoker guy like Mark. But the weather is crappy now so we're going to try one of the rib recipes this weekend. We always have Frank's Bavarian kraut in our cupboard. Already has caraway seed in it. Looking forward to trying this and use a large crock pot instead of the oven. I also need to make some bread to go with. Nothing better than fresh homemade bread. I have to make a lot at one time. Our girls and grandsons devour it as soon as they know it's here. Loving the cookbook too !!

    Looks fantastic! My husband is first generation American. His family are Polish Highlanders. Here is the funny part of the story.....my husband won’t eat most Polish dishes. He has an aversion to fat! If he bites into a piece of fat or grizzle, he is done eating.

    Anna,
    Can you please share with us how do you make the rib stew in a crockpot?
    I made the rib stew in the crockpot on Sunday. I did not know how much water to use in the crockpot and instead of a thickened sauce it came out like soup.
    Then when I took the meat out of the crockpot to ellmusify the stew portion of it, the vegetables were pulverized.
    So any tips or advice you can give us how to make the rib stew in the crockpot would be so appreciated.

    Oh I have my ribs I making this in the near future. Looks so good do you ever use buttermilk or sour cream in your mash potatoes instead of milk?

    If one were to do the mushroom w/onion sauce, would you also process that through the immersion blender or just thicken with flour at the end as the written recipe says? We love ribs and potatoes and I can't wait to try this. It looks like an excellent cold-weather meal. Btw, my hubby does take the silver skin off ribs when he smokes them.

      You can just use flour to thicken if you want. My husband likes that version better, so sometimes he gets his way, and sometimes I get mine ;) Thanks for watching!

    Will definitely try this, however, I searched my local grocery stores and can't find celery root. Live in Minnesota, any ideas?

    Before blending did you remove the berries and bay leaf?

      Hi Renay, yes for this recipe I remove as many of the berries and bay leaves as I can find. There is usually a pepper corn, or allspice berry that slips past, but I do my best. Thanks for watching!

    How would you adjust this for beef ribs? I have an employee who is Muslim, so I would like to be able to make this halal for a potluck

    I made this and threw in the peppercorns and all spice berries so their taste would come out even more. See how the mashed potatoes stuck to your spatula? This is a bad texture from blending the potatoes. Chopping the starchy veggies up violently like that causes them to be quite gummy in texture...versus light and fluffy. 'Violently breaking them down causes more starch to be released, which leads to stickier, pastier potatoes. This is why processing potatoes in a blender or food processor is never a good idea, and will result in an elastic, mozzarella-like texture.'

    Mark, the pork ribs in the states have more fat and have more meat on them because they feed the animals like garbage.
