Gourmet Made Simple: Lamb Stuffed Kale

  • It's not your Bubby's stuffed cabbage- instead, it's lamb stuffed kale, and it's easier, quicker and just as tasty. Gitty's take on the traditional stuffed veg involves lacinato kale, savory, zucchini bolstered lamb and a spicy homemade tomato sauce.
    Lamb stuffed kale
    1 lb lacinato or Tuscan kale
    2 lb ground lamb
    1 zucchini (grated)
    1 onion ( diced)
    3 cloves of garlic (crushed)
    2 tsp ground oregano
    1/2 tsp red pepper flakes
    1 T fresh mint
    1 tsp lemon zest
    Salt
    Pepper
    Sauce
    1 28 oz container of crushed tomatoes
    1 16 oz of tomato sauce
    1 onion ( diced)
    3 cloves of garlic ( crushed)
    1/2 tsp cayenne pepper
    Salt and pepper
    1 T coconut sugar
    Chopped parsley, cilantro and oregano
    Directions
    Preheat oven to 375. In a large stockpot sauté onion until translucent add garlic and sauté for another minute. Add all the other ingredients and stir well. Reduce heat until sauce is just simmering and let it cook while you prepare the kale rolls
    Meanwhile fill a large stockpot with water and bring to a boil. Add kale leaves to water and blanche for 30 seconds until leaves turn bright green. Remove from water and blot with paper towels to remove any access moisture.
    Using a sharp knife cut the tough part of the stem off the kale leaves. (You should be left with a leaf with an inverted v at the bottom.)
    In a large mixing bowl combine the lamb mixture ingredients and season with salt and pepper. With your hands gently mix all ingredients until just combined ( don’t work the meat mixture too much as it will become very dense)
    Take 2 T of the veal mixture and place it at the bottom of the kale leaf ( the point of the inverted v). Tightly roll the leaf around the mixture tucking in the edges as you go along, until the all the meat is covered.
    Pour half of the tomato sauce on the bottom of an oven proof dish place the kale rolls seam side down on top of the sauce and pour the rest of the sauce over them.
    Cover dish tightly with foil, and bake for 45min- 1 hour.
