When I was child we used up the pastry scraps by combining the bits, rolling them flat and adding currants. We called them currant flats. I had forgotten all about this until I saw you vlog. As usual it was entertaining and useful. I always look forward to seeing the next one.

The ovens they use make the food taste fantastic. Cooking evenly throughout every piece and melding the cheese perfectly. Can not beat the warmth it permeates either. Quite the invention and a delight to this day! Yummy! Thank-you for sharing the recipe!

Thanks for the great cookery demo. again. I love the ready rolled pastry in France so when we visit we always bring home several packets in our Motorhome fridge to freeze for later use. The Brisee is our favourite!

Another brilliant video! As a fellow Aga owner, I think you will get a better result with the pastry if you put the quiche tins directly on the floor of top oven rather than in another tin. That’s what I do and it seems to work! Look forward to visiting the chateau one day! X

That does look good. I will have to see if I can get some of those little pie dishes and make some gluten-free pastry. I usually make quiche without a crust because I have coeliac. Gluten-free pastry is difficult.
I make pastry less quiche in double bun cases.. obviously in a bun tray. Great for packed lunches and picnics. Its a shame but Gluten free baking just doesn't hit the spot does it! xxx
I'm going to try to make these but I was laughing because you told Lee he had a choice of what he wanted in his quiche and he said ham and cheese and you said you're going to have broccoli a little bit in it lol. We sprinkled brown sugar and cinnamon and they were delicious.
We used to use them to make small jam tarts for my dad. They were grey by the time we'd finished with messing about with the pastry!!
