For controling nitrite you need bacteria that convert nitrite to nitrate, the bacteria you need is nitrosomonas ( which convert amonia to nitrite ) plus nitrobacter ( which convert nitrite to nitrate ). But you cannot depends on this bacteria only, you need to clean your pond regulary and change water when needed. So you can control you pond parameter. Hope my suggestion help you
