Red Blue poodles are water dogs originally and they woyld typically be working in cold water, the purpose of this cut is to eliminate any fur thats not needed so the cold water is not trapped in the fur but it is keft long in all the joints and vital organs as their coat of fur acts as insulation and keeps the vital organs and joints protected from the cold.

In a show, they are cut like this to show the judges that they are bred to be in top form, that their coat is thick and proper enough to protect their vital organs, it shows that their skin is proper, as well as their joints, muscles etc. So that in keeping with tradition they would have been fine specimens to do their job they were bred to do.
