Nihari masala
2 tbsp fennel seeds
1 tbsp cumin seeds
1 tbsp black cumin seeds
1 black cardamon
1 tbsp coriander
15-20 peppercorns
5 green cardamon pods
10 cloves
small piece of cinnamon
1 star anise
1 tbsp chilli flakes
nutmeg
for the meat
2 tbsp ghee or neutral oil
lahm shank with bone around 2 kg
salt
pepper
2 beef marrow bones
2 red onions
30 gr grated ginger
30 gr grated garlic
3 tbsp nihari masala
1 tbsp turmeric
2 bay leaves
2-3 jogurt
for garnish
julienned ginger
sliced chilli
cilantro
lemon
