You should be able to. Check if your CPU is compatible:
      www.vmware.com/resources/compatibility/search.php?deviceCategory=cpu
Even if it's not officially supported sometimes there is a BIOS hack to get 7.0 to run

The VMware Hardware compatibility guide does not list the R720 as supporting machine since V7 needs a. v3 series CPU chip which is in a R730. Did you do something to get this to install my try on an R720 with a v2 series CPU chip ended in a CPU not supported message and the install ending?

Not sure what you are looking at but my R720 has a E5-2650 V2 CPU which is compatible with 7.0, see screenshot tinypic.host/i/screen-shot-2022-08-12-at-70415-am.nKb8j

@@cnclabs8885 I searched by Dell R720, did you use the VMware ISO or the Dell custom ISO? Thanks for the quick reply.

@@bobmps I downloaded the VMware vSphere Hypervisor (ESXi ISO) image straight from their website. I didn't use the custom ISO's, all the drivers where good on first bootup. Make sure you get the free version. Link is in the description, create a free vmware account first.

@@bobmps I have successfully upgraded from 6.5 to 7.0 with DellEMC installer (VMware-VMvisor-Installer-7.0.0-16324942.x86_64-DellEMC_Customized-A02) yesterday.
The storage type has been updated, and it also gave me an error message due to an unsupported CPU (and one more unidentified device), but everything seems to be fine. (R720xd: 2x E5-2630 v1, BRCM 10G/GbE 2+2P 57800 rNDC, 6x3TBSAS + 2x2TBSSD).

@ Hey, I am trying to install with 3 SAS drives. Really appreciated if you let me know that with this version (VMware-VMvisor-Installer-7.0.0-16324942.x86_64-DellEMC_Customized-A02) are you able to see the SAS drives detected by esxi 7.0? and also for unsupported version, was there any workaround you used? thanks
