Blend until pesto is an even, smooth(ish) texture. Season with salt and pepper. 2. tomatoes: Place a skillet over med-high heat. Add oil and swirl. 3. Add tomatoes. Sauté until tomatoes begin to burst, 3-4 min. Season with salt and pepper. 4. assembly: Spread butter onto both pieces of bread. Flip and top each slice with pesto. 5. Top one piece of bread with torn mozz. 6. Drizzle cheese with glaze. Top with an even layer of tomatoes. 7. Top with remaining slice of bread. Gently press. 8. Clean skillet and place over med heat. Add grilled cheese. Pan fry for 3-4 min. Flip and continue to pan fry until evenly toasted and cheese has melted.
