    Edited 3 hours later: thanks everyone for liking the Cantonese version! We decided to try something new, had fun filming it and glad you like it as well. In the future, we can try to poke around and maybe do more "dual-language version" for Cantonese related cooking content.
    1. Vegetable quantity. The veg quantity we gave in the video is based on a general nutrition guide that’s used by doctors in China, which suggests about 200-300g green vegetable per day plus 200-300g fruit. And it also jives with my experience growing up, we usually have about 500g-720g worth of stir fried leafy green at dinner for three people (lunch is much simpler and maybe just a small stir fried whatever with rice).
    If you’re a family of 6 and you want to stick with the veg quantity (roughly 1.2kg), then I’d suggest split it into two dishes, e.g. stir fry half and turning the other half into a soup or simply blanching it and eat with oyster sauce.
    2. Aromatics prep. When cooking at home, if it weren’t for a specific dish that needs special shaped aromatics, garlic and ginger are generally just crushed. So don’t obsess over finely mincing your garlic and ginger for everything.
    3. From what we’ve seen, the more local dai pai dong around PRD (Pearl River Delta) often use Cantonese rice wine as well, it adds a nice “homey” and special local taste. Then some people would also drink the rice wine alongside a meal, it does pair really well with Cantonese food.
    4. “One fish multiple ways” is a very fun way of eating. Nowadays, it’s most common at sashimi restaurants and some places that feature fish. In some restaurants, they can even do “whole fish banquet”, i.e. a table’s worth of dishes that’re all made from fish, there can be fish ball, fish cake, steamed fish, stir fried fish, baked egg with fish intestine, and so on.
    5. The soup culture. As we said in the video, Cantonese soup culture is so vast that it’s impossible to cover even in a full video. In fact, in addition to that cookbook we showed in the video, we have a separate cookbook that’s just Cantonese “soups”. Hopefully one day we can at least do a video on the general ideas of how to make Cantonese “lou fo leng tong” (old fire good soup, which is the long brewing one).
    Oh, the very fist soup that Canto kids learn to make is often a soup with pork bone + carrot + corn + red date because it’s very easy, got a natural sweetness, and almost impossible to go wrong.
    6. When making a soup base with dried seafood, cure meat, and such, the key is to make them small. I usually like to mince up the dried shrimp or dried scallop before tossing them in; or cutting the cure meat (usually cured duck is used) into small piece and give it a quick fry, then let it cook on high with hot water to create a milky soup.

    PLEASE do more videos in Canto! My favourite part is how your sense of humour comes through so much more when you talk in Cantonese. I genuinely found myself giggling throughout the video (and as an overseas Chinese, my own Canto comprehension isn't even that good!).

    Yes! This is exactly what Cantonese typical dinners are. Ppl ask me and will say I love orange chicken blah blah blah, but I tell them it’s fish steamed/salted and friend, soup of some kind, and some kind of Chinese leafy/ or zucchini like veggie stir fry or steamed. Thank you for the video! I will not feel as alone when my grandparents aren’t around to share this type of no more. It is just us three and my grandma is still able to cook and I do as well. You’re also right about the maybe 1 or 2 dishes, I feel bad when I don’t make “a lot” (like 3 dishes) but they understand I’m not so fluent in canto cooking, so it is what it is.

    This sounds exactly like the conversations I had with my family growing up about what a "meal" is. My mom would always make a vegetable dish and soup, but my dad would always ask for beef, and we'd always argue what was enough or too much.

    I speak Cantonese pretty well, but this is humbling me a little. But it could be just cause in amercianized and speak canto with family only. Please do more Canto speaking videos!!! I absolutely it and would help me expand my own vocab.

      If you're not used to hearing different dialects of Cantonese, you might struggle! Don't be too hard on yourself and just listen to more Cantonese things :)
      My parents speak an older dialect of Hong Kong Cantonese, and I speak a more Canadian version of that dialect. But growing up I was exposed to at least 3 other regional dialects so I got to practice figuring out the similarities!

    I would love a future series on old fire soups. I only know a handful of basic versions and would love to expand my database but my mom would only give approximations with no real explanations (per auntie standard) and I don't want this wonderful and comforting piece of our culinary culture to fizzle out. I know there are other channels that do teach recipes for old fire soups but you guys always include so much more background and context beyond a simple recipe ❤

    My family is Fuzhounese, and I grew up in a neighborhood with a good many Cantonese speakers (NYC). Being (barely lol) conversational in Mandarin and Fuzhounese, I find it fascinating how some words are closer to Fuzhounese than Mandarin, and some words are closer to Mandarin than Fuzhounese. Though I only knew a few Canto words from my best friend, this video wasn’t completely incomprehensible to me and I even learned a few new vocab today :) it was a nice little mental exercise. Definitely looking forward to more Cantonese-spoken videos! ❤

    I know it must take a lot of work to do a video in two different languages but it is much appreciated. I'm trying to learn more Cantonese to be able to speak to my fiance's family more and it would especially be great to get used to talking about cooking in Cantonese, especially to talk to her grandmother who doesn't know any English apart from "hello" and "bye bye".

    As I’ve probably commented on other videos in the past, I absolutely adore listening to Steph’s voice - I find it to be something like a gently ticklish brain massage (fwiw you both have wonderful “vocal aesthetics,” if I may use a term I just made up - honestly that’s the main reason I follow and regularly watch the channel; I’m only mildly-to-moderately interested in the actual cooking lol but I digress…). Now, I’ve really only ever heard her speak English before, and just for context I don’t speak a lick of Cantonese (tbh I also know less about it than I do most other widely spoken languages - there is definitely a European bias to my linguistic knowledge-base), but oh my goodness, I somehow find it even more enjoyable and soothing listening to her speak Cantonese! In other words, please do make more of these. 😆

    i absolutely love fuyu... my favorite way to eat it is with sugar, sesame oil and eat it with rice... my grandma often eat it this way during the "vegetarian period", the 1st and 15th of the month.

    Love this video. I don't practice my Cantonese half than enough, but it was really great listening to this video. This video feels so nostalgic, my mom used to cook like this all the time, but since I don't live at home anymore, I don't cook like this anymore. Might have to do this once in a while when my schedule allows for it!!

    I love. And I like this "cook" the premise. I often more traditional Chinese fare. One of my favorites i when "if you don't have..." oh, baby, I have, and probably too much of it. I don't do a lot of Cantonese food, but videos like this make me want to.

    I would love for someone to translate a Chinese soup cook book for those of us who grew up drinking them but can't read Chinese. I would definitely pay good money for this especially if you explain why we use certain ingredients for the different seasons and if you want relief for I remember dry skin, get more collagen etc... My mum use to say "drink this it's for beauty" every soup she made was for beauty...lol... I loved them...

    it's fun listening to your chinese, but....for some reason, you didn't include the captions except for the "hey amercians go to the english version." I did watch that one first, but....I dunno, I was seriously considering watching this one too if i could follow along with captions. more of an ASMR, experience than reaaaally following the lessons. *hug*

    Thank you! Thank you! Thank you, Steph for this video. It brought back so many comfort foods and flavors that have forgotten. Now I have to make some of these to stop my mouth from watering. Some are so easy to make, like the fermented tofu, less than 20 minutes and you'll have a piping hot 3 course meal!

      And also put Chinese subtitles in it. Because majority of viewers are not Cantonese speakers, even are Mandarin speakers. So, that's why, putting/providing Chinese subtitles is important for giving information on it. That's my suggestion......

    16:44 I love how so much of our common issues with our own culture, heritage, and background comes from the trauma and frankly embarrassment of being so bitterly poor in East Asia 😂
    I love canned fried dace with salted black beans, and i love having it with thai jasmine white rice. But that is the quintessential poverty food, when all you have is a small bowl of rice, a small fire or lighter, and can of fish. and i will never see it in my grandparent's or older uncle's pantry. I genuinely think it tastes a lot better than some of the overpriced king crab dishes. even snow crab tastes better than king crab.

      He does not actually. When you know Mandarin, you can get around and there's less incentives to learn Cantonese.

      Don't forget that Steph is fluently multilingual. Please don't assume you know what language the two of them are working in when they create these videos.
      For example, she could be working in English and then have translated into Cantonese and, as she is fluent in both (or even Mandarin to English to Cantonese). The translation may feel seamless but maybe there are things being said in English that get missed in translation when it's converted into Cantonese.
      There's a big reason why it's very common in Hong Kong, a pidgin language of Hong Kong Cantonese and English is spoken. Some things are just conveyed better in one language.
      tl;dr Don't be a language gatekeeper.

      @@canuckkat I don't need to assume to know that I feel like I've learned more about her listening to her in her native language in one video than I ever have from all of the other ones. I feel like there's just this lightheartedness that's missing in the English ones, she uses a lot more "slang" and casual speech here in Cantonese than I've experienced from her before.
      I'm not sure why you accuse me of language gatekeeping? I'm not even sure which language you are accusing me of gatekeeping here. It's not offensive to say someone can express themselves more naturally in a language that they consider their mother tongue

      @@canuckkat Also, Chris says as much in the description of the English video: that her personality comes out more when she's speaking Cantonese. I think he's wrong, personally; it's mostly a different cadence of expected tonalities in Cantonese that make it sound more sassy to an American English speaker, because that kind of tonal modulation in English is usually done to make fun of the listener.

      Also it's one thing if Chris/Steph says Steph's in English isn't as strong as her Cantonese. It's another thing for a total stranger to say that she doesn't sound fluent enough in English so she should do more videos in Cantonese cuz her Cantonese is much stronger. IMO that is rude.
      If your Cantonese is stronger than your English and that's why you prefer Steph to do more Cantonese videos, that's fine. No one should be like the commenter I replied to and say that the English script feels like it's vastly "missing something in comparison" cuz that's rude and unnecessary, you know?

      Canto has sounds/phonemes and tones Mandarin doesn't have. So even if you don't understand either language, or are completely new to tonal languages, it's like listening to Italian and French: there are similarities due to their similar background, but there's a lot to make them distinct from each other beyond vocabulary.

      I mean, really, it's closer to English and French. Cantonese comes from the language spoken by the Yue people who were conquered by the Chinese long enough ago that no one bothers differentiating them anymore, and the languages mixed as a result. Kinda similar to how English has a bunch of French loan words because of the Norman conquest way back when. The difference is that pre-French English (a Germanic) was so structurally different that they couldn't integrate anything else, whereas Yue and the Beijing language were similar enough that a thorough mixing wasn't a problem. (I'm very badly oversimplifying the history for brevity, for the record, but it's a complicated topic.)

      @@Duiker36 Much better explanation on the historical side of things. I'd avoided using English only to provide a comparison between two related languages outside the English/Germanic family the OP might not know, as it sounds like they're observing Mandarin and Cantonese as a non-speaker, that is only on the component sounds and not the words.
