It’s pretty easy but just requires many steps…
Ingredients:
Beef Chuck (or whatever meat you prefer)
Vegetables:
Militon / Chayote
Cabbage
Carrots
Watercress
Eggplant
Tomatoes
String Beans
(You can add other vegetables such as cauliflower and broccoli for a more vegetarian recipe)
Spices:
Haitian Epis (Neguess Creole Epis is available at www.Machehaiti.com)
Tomato Paste
Cooking Oil
Maggi Bouillon ( I use a substitute)
Black Pepper
Garlic Powder
Crushed cloves
For this recipe you will steam all of the meat and vegetables together. First clean and marinate the meat with Haitian Epis and let it sit. Next, carefully chop up your vegetables as shown in the video to ensure they are cooked evenly. In a large pot, add the seasoned beef and evenly spread throughout the bottom so it fully covers the pot. Next add the tomatoes, militon, eggplant and other large vegetables, evenly spreading them around the pot in a large circle to ensure the vegetables cover any holes. This will ensure everything receives steam and will cook properly. Add the strong beans, water cress and carrots directly onto the center of the mound and then cover on medium high heat for about 45 minutes max.
The vegetables should be completely steamed and soft enough to mash. In a separate bowl, add the militon, eggplant and cabbage, and begin mashing into a soft consistency with no large lumps. Turn the fire down to medium and In the pot with the remaining meat and vegetables, add in a large spoon of tomato paste and begin mixing. When the tomato paste has began melting, start to slowly mix in the mashed militon cabbage eggplant mixture. Give it some time to cook and the tomato paste will start to blend all of the ingredients together. When the mixture starts to bubble, add in any additional seasonings such as the sweet peppers, cloves, butter, garlic powder, Maggi bouillon, pepper and anything else you’d like to add. Give it a taste and if needed add more seasonings. If not, let it cook on medium heat for another ten minutes, continually mixing to ensure the vegetables do not burn.
Voila! Haitian Legume!!

LOVE!! Next time put tomato paste in the oil after meat browns a bit. Removes can flavor and tastes better!
