I marinade my pork ribs over night. And they come out great and tender on the grill every time.

We used a little Tabasco Sweet & Spicy sauce on it and it was delicious!

We didn't have any wood chunks that day, but using a mix of B&B briquettes and lump gave me a touch of smoke 👌

Yeah it never occurred to us either until we saw that recipe. Of course a pork butt doesn't have to have a marinade, but it's worth trying out!
