    Best way to test is with a glucometer. Compare before refrigeration after cooking and then after refrigeration. Glucometer doesn't lie or misinform.

    Great video. I love that you explain the importance of first having the proper beneficial bacteria to begin with, otherwise without that you are putting the cart before horse when you incorporate resistance starch in your diet with the unrealistic expectation that resistance starch will work miracles I think this is a big issue with people with messed up gut microbial health who experiment with resistance starch, get no benefit, then blame the resistance starch as being useless. I say fix your gut microbial health first folks, otherwise you are putting the horse before the cart!

      I might add that adding fibers in general when you actually have dysbiosis can cause worse symptoms, so working on your gut sometimes by eliminating fibers in the beginning can be helpful as your gut heals.

    tried baking and cooling a sweet potato on two occasions. ate them cold, both times my glucose went from 95 to 175. I think it is another mith. They sure taste good though.

      It does NOT get rid of the potential for blood sugar raising, it just is slightly better, and certainly better for your gut. It's a very small fraction that gets converted to RS but even having a little RS is good for your gut.

      I just tested 2T (reccomended daily) of resistant potato starch powder. After 1 hour my blood sugar actually went down (80 to 69.)

      have you also tried testing your blood sugar after eating a warm sweet potato on 2 occasions to compare how your blood sugar changes with warm vs. cold potatoes?
      how does your blood sugar change when you eat other foods, especially other carbs? is 95 to 175 lower or higher than after eating other carbs?
      how long after you finish eating do you test? the longer you wait to test the smaller the rise should be, so make sure you wait the same amount of time for each different food you test this way. @airplane george

    Interesting lecture. I have two major questions for you. I agree with you that RS3 is beneficial, but the quantity of RS in cooked and cooled foods is really very low. For instance, you can get 4-5% resistant starch in a cooled and cooled potato, which is barely more than the 3.5% from a hot potato. That little bit of resistant starch is accompanied by a lot of high glycemic starch, which is definitely detrimental. What evidence have you seen that shows health benefits from eating a ton of cooked and cooled potatoes or other food RS3 sources that can point to the resistant starch as the source of benefits?
    Very low levels of resistant starch can help healthy people stay healthy, but hundreds of clinicals have shown that people in general need to eat a LOT of resistant starch to improve gut health, improve metabolism or any of the other benefits associated with resistant starch. O'Keefe's study from the Univ of Pittsburgh showed that Africans consumed 28 grams of fiber + 38 grams of resistant starch/day while African Americans in Pittsburgh currently consume 14 grams of fiber + 5 grams of resistant starch. Resistant starch is certainly missing in our diets, but a minimum amount of food-based resistant starch now is not going to make up for a lifetime of low dietary fiber, low levels of fermentable dietary fibers and almost no resistant starch.
    My analysis at resistantstarchresearch.com/posts/3-levels-of-benefits/ looked at all of the evidence and concluded that there were few benefits seen in clinical trials at 5 grams of RS/day, regularity and satiety was seen at 10-15 grams/day, but 15-30 grams of resistant starch/day was needed for improved insulin sensitivity, create inflammation benefits, gut healing and more (all benefits shown with supplementing with RS2). You cannot promise people that low levels of resistant starch will give them health benefits shown with high levels. The data does not support your suggestion that RS3 from foods is the best option. If you have additional studies to support your belief, I'm open to learning more.
    My second question - what data are you referring to to suggest that green bananas were not meant to be eaten? If you know of any data, I would love to see it. I have seen 25 clinical trials with resistant starch from green bananas from all over the world showing strong health benefits and NO references indicating detrimental effects. Bananas (including green bananas) have been consumed in the tropical regions as a carbohydrate source much like other starchy foods in different regions of the world. By the way, there are not 25 well controlled clinical studies on RS3 resistant starches.

      1. This was made for my audience that is already eating 1 pound of leafy greens per day and are getting plenty of fiber. I am not suggesting people eat a "ton of potatoes" most certainly not white potatoes which I don't recommend. I do like sweet potatoes though and think they are a good source of starch.
      2. Again, I am not promising anything - my audience (and to this I referring to my FB weight loss group) knows that all of these suggestions are aimed at increasing the quality of the food incrementally overtime. When I recommend r3, it has nothing to do with potency or benefit relative to other fibers just that retrogradation happens naturally and is easily accessible and does lower the GI which is important for our group.
      3. About the green bananas, I may have spoken a bit too dogmatically about general principles - generally speaking - as you probably know animals don't eat unripe fruits because they generally have chemicals like lectins and saponins that cause gut irritation - but in this case, you are probably correct, they might be the exception to a general rule as the benefits of the resistant starch for the majority of people in this case would probably outweigh the negatives. Thanks for asking for clarification on that. Bananas certainly do have both lectins and saponins, for me to officially recommend the flour I would need more information that there is nothing else in it besides resistant starch.

      @@JCarpMD I heard the little RED POTATO are not as starchy as the russette potato or u con gold potato, I was eating them that way i would cook them and put them in the frig to save time to eat the next day i would season them but no butter. I stopped eating meat and dairy i use to have about 12 pieces a bread a day but not every day, but most of the time now during those 6 weeks i had 2 slice to make a sandwich ( which i never thought was possible to "stop meat) i lose 21 pounds in about 6 weeks and feel good and will continue this way of eating.

      A couple questions. 1) are you a medical doctor? If not what is your field of study. 2). My MD told me to cut out startchs, no potatoes, rice, wheat, corn, etc. I did and lost 70 pounds. Kept 60 of it off for four years now.. Sadly I keep re- introducing starches, and regain and reloose the other 10. I am on the road about 300 nights per year. I have recently started eating oatmeal ... But stopped all other starches (I eat some carbs) , any thoughts???

    The statements made about resistant starch are too general and lacking in detail. What is the exact chemical composition of each type of resistant starch? What makes resistant starch chemically resistant? This process of heating and then cooling RS3 starches is not clearly and exactly stated. If you take a potato and heat and then cool it, then you will get a glucose spike. Some companies offer supplements of resistant starch. Are those supplements of any value?

      No, the best thing for you is to fertilize your gut with a variety of different types of fiber from as large a diversity of plants as possible. That is how you get your microbiome to be optimally healthy, not by focusing on one type of fiber.

    Jícama is a great prebiotic resistant starch. Also, buy the flaxseeds and grind them yourself. You’ll know they’re fresh

      There are also about 2 grams of naturally occurring sugar in one cup of jicama. The remaining 3 grams of carbohydrate in jicama is starch. *Not resistant starch.*

    Just started w potato starch. Have noticed big difference vs chia seeds and fruit I've been eating. First, why the difference? Is there a difference btw these fiber sources? And if I've noticed this difference, is there anything else I should be taking? So far my research says potato starch powder is the most efficient way to get resistant starch. Occasionally I'll have a green banana.

      Chia is soluble fiber and mucilage. Both of these have a different effect in the gut than resistant starch.

      By the production of short chain fatty acids (SCFA). These are absorbed into the blood stream and interact with the body through a variety of ways. Obviously, also helping to play a role in correct blood sugar is also going to have a significant effect as well. Don't forget to subscribe to my channel so you can hear more.     Possibly stupid question. For resistant starch 3 can you refrigerate and then reheat or does reheating damage the resistance?

      Firstly, you don't get that much, but it is better than nothing, secondly, yes, you can reheat, the resistant starch will not degrade after being formed.

    So you cook the potato and refrigerate it, must you eat it cold? Is it more effective with boiled??? Or baked??? Potato. I read that yams and sweet potatoes are healthier boiled instead of baked, is this true???? Thank you 🌻

      You don't have to eat it cold. The small amount of RS forms and is stable so you can heat again and even refrigerate again to get more RS.

    I haven’t found any different types of RS also flax seeds do not digest/absorb in the gut w/o being ground first I’ve been told the cooling of cooked starch is the natural way to absorb in the gut. ??

    Dr Carp, that 3rd Resistant Starch you were talking about, - after cooking it first, then refrigerating it overnight, can it be heated, or warmed up the next day, and will it still be Resistant Starch?

      Yes, it will still be there! You can even heat and refrigerate again and you will get some more formed, very little but some.

    I would like to know more about why green bananas are bad for you. They are used often in Caribbean cuisine. Green mangos are also eaten in Asia, and green tomatoes as well....hard to believe this would be harmful.

    The resistant starch type 3, will it be affected if the refrigerated food is heated again before eating?

      No, in fact if you heat again and then refrigerate again, you get a little more resistant starch, but the amount of all this starch is small, so I wouldn't expect any sort of major blood sugar change, but the resistant starch that is formed, will still have benefits in the gut.

      It's only a small change but for people that don't have blood sugar issues, having a little extra resistant starch is good.

    interesting topic doc, i know about the starch contained in certain food but this is the first time that i have a lecture on resistance starch which i believe it was very cool
    i have a question for you regarding rice grains; i have an old neighbor and she is about 65, 130 lbs and diabetic, for some reason the other day we started to talk about food and she told me she is not eating any rice at all because its bad for people 😵
    i was really amazed because my mother includes rice, salads and other grains as well in every dish she creates (i love red beans too) - and my family is very healthy overall but we all have a little high blood pressure, no bad colesterol and no diabetis
    so, it is true that rice is such a bad thing to eat? and if your answer is positive, why?

      For diabetics, yes, it can raise people's blood sugar but obviously, for others is it ok in moderation as a great part of the world lives on rice. Even with cooking and cooling rice, it can still raise people's blood sugar especially in diabetics. Thanks for watching!!

    look at the lectures on you tube , of ROBERT LUSTIG M.D.. he diagrams what happens to GLUCOSE in the liver and in the body. he also diagrams what happens to SUCROSE. in the liver and the body. TWO COMPLETELY DIFFERENT ACTIONS.!!!!!! GLUCOSE and SUCROSE are completely different.!!!!!!! STARCHY foods are NOT the same as SUGARY FOODS.!!!!!!!!!!

      No, raw potato is loaded with anti-nutrients and if they have sprouts or are have any green are actually toxic.

    Hello Dr Carp , I was wondering if you have any recommendations on how to quit drinking Coca Cola, I'm completely addicted to it. Any tip I'll try because I am desperate to be honest.
    I am drinking carbonated water with a half a lime 3-4 times a day and it helps but I still need the coke

      Fabiano Pina He is on UA-cam only to make money 💰 You don’t need anyone’s advice to cure an addiction. Just stop drinking it. Ween yourself off. My husband was addicted to coke and he gradually weened himself off because the only person shoving it in his mouth was him.

      I mean with resistance starch e.g. can i put mayo with cold potatoes as in potato salad or putting cream with rolled oats

      Yes, you can BUT there is still a lot of digestible starch to knock you out of ketosis. The amount if RS that forms from refrigeration is healthy, but it only converts a small percentage of the actual starch to RS, so you still get a lot of carbs from the potato. So, if you are on a ketogenic diet, it's likely that the carbs left in the potato will not be consistent with your ketogenic diet.

    Dr. Carp - Are we suppose to eat the refrigerated rice, sweet potatoes, cold or can we heat them up? Or will re-heating destroy the R.S.?

      You can re-heat and even re-refrigerate to get a little more RS but please keep in mind that it is only a small portion of the starch, you are still getting a lot of regular starch. The benefit is more to your gut microbes, than it is to helping with blood sugar.

      @@JCarpMD - Thank you for replying. Then perhaps we should focus on the Cassava root and the flour it's made from? It's high in RS and it doesn't spick our blood sugar. What do you think of it?

      @@OMGaNEWBIE For resistant starch, nothing beats green banana flour or modified citrus pectin. Green banana flour (don't heat it) added to a smoothie is awesome for your gut bacteria and blood sugar!!

      @@JCarpMD - Thank you so much for this info. I recently bought the un-modified potato starch. Hopefully I can find the GBF in my area and use it instead in my smoothies.
      I hope that it too is un-modified. If yes, then I'd prefer to use it for baking as opposed to wheat flour, if that's possible. Looks like I've got some homework to do. Thank you again for taking the time to respond with valuable info Dr. Carp.
      I've recently been diagnosed with Kidney Disease, I also have high blood pressure which I keep down, without meds, by eating celery every day. And I've had a brain stroke 4 yrs ago. I also suffer from IBS and to much fiber is a killer for me.
      So now, due to the Kidney problem, I have to go more vegan if I don't want my Kidney's to get worse.

      Yes, works the same, it's not a huge amount of RS that forms but any extra amount of RS your gut bacteria can use i going to be helpful!
