Honestly this would be cool as a mod that turns the cutscenes first person. Obviously the camera angles would probably have to be tweaked and some certain objects changed to make it look better, but still it would be cool

That's impossible because the Anniversary cinematic scenes are pre-rendered. The only thing modders can do is add the in-game Anniversary graphics to the original cutscene.
