Here is a recipe for those sad egg yolks left behind - (1) Add salt and chilli sauce to a mashed avocado and mixwell, you can add other things like onion/coriander as per your taste (2) Now crumble the yolks and mix in gently, don't mix too much and make a paste. (3) Use this as a filling to make sandwiches. (4) This can be stored for a couple of days in fridge. (5) I usually make this filling with whole boiled eggs (chop the egg whites and crumble the yolks), so sharing the idea 🙂
