I think you are on a good track with this Idea adding a 17th/18th c Dutch style "old town" to your city will definately add a lot of personal charachter: I would probably start by picking a few of the typical narow style buildings along the canal to attepmt to imitate them in Lego first as opposed to worying directly about how to integrate the canal into the city and since it is your city in the end you can be loose with your interpretation of the Utrecht Canal without going for the 100% faithful replication of the exact area like in that other waterfront MOC. Either way I am Subbing to your channel now and interested to see how your city develops. I do not have a lego city of my own yet but am planning to start one with the new 2025 Modular.
