Honestly, the sharpening process is not really necessary. You'll get the same results hand sharpening going from a 1000x diamond stone directly to basic honing compound in 1-2 minutes. What IS IMPRESSIVE is that the man doesn't have a single drop of dirt on himself going through all that waterstone. He can then the freehand chisel into a plane without a vise. Getting it done. To me, that's the hallmark of a professional. Guy does it like he is casually having lunch. Not a single drop of dirt nor sweat.
