I Love canning and freezing . Thats how my Grammie taught me. I have a freezer full. Canning shelves full. My family loves it all. Hopefully , I can pass it on to my Grandchildren
Hi Renee! Luckily we still have farmers markets going on here and I can still get certain produce there. I try to shop sales at the grocery stores, but sometimes you just do what you need to. Good job preserving your broccoli, pumpkins and squash. I do like your vacuum sealer, but just me and sometimes my daughter and I will just make do with my Food Saver. wow i am amazed you can still get stuff from the farmer outside of in the store havent been able to get anything since end of october. what a blessing.
It’s been a very mild fall! He gave me broccoli and squash and sweet potatoes yesterday. I am very thankful! I am giving him some of our kennebec potatoes that I dug up this morning
I’ve been processing a bunch of pumpkins and winter squash. Someone on a local group was giving away a bunch they had planned on carving and using for decorating but never got to it. With what I had from the CSA I ended up doing four oven fulls! Had too much going on this week to can any so baked and sorta mashed them all. So far, two very full freeze drier loads with one more load ready in the freezer. Now to figure out how much to rehydrate for a pie!
I’m don’t have a freeze dryer. That is really cool! We love the pies and cookies and bread. I have done three oven fulls two and have a couple of squash in the basement. I haven’t made butternut squash soup yet this year

Renee you don’t find that it start to get some water in the pumpkin after scooping?
A little but not too much. When I thaw it I drain off excess liquid. Maybe it it the type of pumpkin?
