When making a cheese steak I find the easiest way to build is after you pull the dome and the cheese is melted put the roll right on top and then use the spatula to pull the complete sandwich off the griddle. That gets the cheese between the meat and the bread. I also find that you really need to wrap in butcher or parchment paper and let them rest a few min; something a sub shop just does but we often skip at home yet totally changes the texture of the sandwich.

As a Texan, I approve! :) The only thing I would have done differently is use Jalapenos instead of Poblano. Jalapenos are big in Texas and there's this Philly Cheesesteak place in Austin that's called Texadelphia and their "Texas style" cheesesteak has Jalapenos and lots of them too. I really like the use of Fritos in this. A sandwich with a crunch inside is always a good thing. The chili cheese flavored Fritos would have helped with the Frito pie flavor, but those are very salty so that might have been too much. The cheese choice I think was right on too.
I saw an Exmark billboard in my local town the other day and I say to my Sous chef, "brought to you by, Ballistic BBQ". I'd take your cheesesteak recipe whether texas, philly, or Cali any day of the week. Cheers brother!
You can buy the amoroso rolls that they use in Philly pretty cheap. 48-60 per case depending on the length for $40. Assume you could also use them for garlic bread
Sup Greg, looks and sounds incredible, great tip cutting/shaving brisket frozen or part frozen👍, bro still love that griddle, last week I did my last corned beef in pressure cooker, browned it then on rack so out of liquid, used the meat claws to shred was good for all, daughter bought some soft rolls from bakery still warm and I could eat it, I have 2 briskets left in freezer so one will try this sandwich, if I let some veg go longer till soft and daughter gets those rolls I believe I could eat this, no Fritos tho😢, Texas cheesecake sandwich 🤤, I'm trying bro, whole new cooking adventure I guess, oh will email an update👍, enjoy holiday with friends and family, tyvm tc 🍔🥩🇺🇸🍺

Lost almost 100lbs fast.. now 4 operations, 1 on rib removing half, and 3rd since on spine.. grandkids around a lot so I push through what can. 50 ain't easy lol. The guy I suspected if robbing me is in jail, he stole a screen house from a neighbor and cought on tape, was almost $5000 screen house/gazebo, hours to break it down, was 6 of them.. enjoy holiday again, I'm sure you'll be busy🇺🇸🍺
I don’t mind you using a meat slicer. I don’t have one and it’s good to see you can cut it with a knife but I’m all for making life as easy as possible. These videos are fun, entertaining, educational and hopefully it’s fun for you to make - if that means not putting so much elbow grease into it, I think that’s a good thing.

Maybe use Bolillo rolls? More like a crusty French bread used in a Mexican Torta. That looked delicious! I now have a strong urge to deplete Safeway of their "Steakum" and Bolillo roll supply. Along with the rest of the ingredients of course. Kind of low brow I admit, but I love those things. Edit for brain bubble - Have you done a NY style chopped cheese sandwich?
I've used those kind of rolls for years for cheesesteaks. They work perfectly, as long as they are fresh and not dried out as they tend to get after a couple days.
Looks amazing Greg. Being from southern AZ I might like to add some roasted Hatch green chilies to that work of art instead of the red peppers. That sandwich has many different options depending on the particular region. Pretty sure TX approves of your version! 🤠
Thank you for honoring my beloved state of Texas. If you grow your own pablano peppers you can harvest them red ripe. Use them instead of bell peppers. I would be happy if you would have pulled the meat before you flipped it the first time. Raw in one side cooked on the other or maybe just warmed up raw meat.😂 Other than that hat's off brother. I think there is no better Cheesesteak, as all deserve to be eaten, and depending on where you're from you might prefer one of them over the other. It's like what type of pizza you like, what toppings are your favorites, and so on. Good steak stripes, cheese, and good bread rolls make it delicious already. The only thing I noticed was that I would slice the stripes way thinner, as I like them super thin and with a lot of surface to carry the cheese.

The veggies are already seasoned, the cheese is adds abut salt to it, you did great by not seasoning the meat cause it all comes together at the end 👍
