Been to Iceland once. Hoping to go back there soon. Hubby is already making the list for 2024, but if I can get at least 3 months ahead on work, I'd like to add Iceland to the mix. Being able to just go to another country on the weekend is just another bonus reason we moved to Poland.
Yeah, Poland being so close to so many different countries is definitely one of the attractions. I qualify for a Karta Polaka so I'm wondering how doable a semi-retirement there might be.

Another egg substitute is ground flax seeds. Bananas are good but you might not always want the sweetness. The flax seeds are so good for savory dishes!

Sure. I used the Ghirardelli chocolate chip brownie box mix. I subbed a smashed banana for the egg and use oat milk instead of water. I only cooked it for 40 minutes so it would turn out fudgy and that totally worked. The pancake recipe is 2 cups of flour, 2 cups of vegan milk, 2 tbsp of sugar, 4 tbsp of oil, 3-4 tsp of baking powder, pinch of salt and 1 tsp of vanilla extract (optional).

I visited Iceland once 20+ years ago and always wanted to go back. I plan to retire from my municipal job in a few years and wonder how feasible it'd be to continue my online interpreting job while travelling to different countries.

The roads will likely be icier but there are studded tires on the car, which helps with traction. If you do decide to drive then just take your time. 😊

Yes, this is the current weather. Hvammsvík is a nice hot spring. A really low key one is called Guðrúnarlaug. Definitely a good idea to not go to the Blue Lagoon right now.
