Coronavirus Pizza Challenge | The No-Flour Pizza Cook-Off
While isolating at home during the coronavirus outbreak, my Italian wife and I have been dying to eat a pizza! The only problem is that our grocery store's flour shelves are completely empty.
To save ourselves from another day of boredom and pizza cravings, we decided to conduct a friendly cooking competition. It's time to see who can make the best flour-free pizza!

I seriously dislike cauliflower, so I would pick Harper’s version for this one.
This was grand! We had the same problem so I made a pizza with tortilla wraps that I found in the freezer 😂it tasted pretty good, my uncles Italian wife was impressed too, her father however was not. She was just being nice. Her father Umberto came back into the room with a bottle of chianti, declaring that it would make a big improvement to the taste.🤣

Eva is just like me. I went into Lockdown with 4 kgs of flour that bought in February because I don't ever not have flour in my house lol so when the world was dying for flour and yeast i already had a secret stash before the world went crazy..
No matter how Harper makes his pizza there is always a drawback for Eva😂

I experienced this with my Italian when there was no flour available. Interestingly, we found you can make flour at home if you have a high power blender. We ordered wheat berries and ground them into flour in about a minute. This hasn’t been easy. Hang in there, everyone!

Sorry, Harper...gotta side with your wife. That pita was burnt. If you let it crisp while you were warming up the sauce and cheese, it might have been better. But you tried! We are nothing without trying things out first. Glad you two got to eat pizza in the end!

Definitely makes all the difference in the world, San Marzano tomatoes, but it’s hard to find fresh yeast here in Phoenix, AZ

Cauliflower pizza crust has been a ' thing' for years! ( Not made think like that though!) Zucchini I find makes a better crust that you can pick up and holds together. You can make pizza crust from chickpeas as well:)
This has been our problem too in UK a few months ago! No flour, no yeast for several weeks!

When I used cauliflower for crust I drained it and squeezed out as much moisture as I could and made it thinner. It surprised me as it was more like thin crust pizza. Yours looked very good.

Fun facts: while the origin of the word is dubious, the most likely etymology of the word "pizza" is from Byzantine Greek "pita." So, in a way, Harper's pizza is philologically correct...
Also Caputo's is the best pizza flour in the world, but it's actually made mostly of high protein North American hard red spring wheat. So, in a way, you can't make real Naples pizza without America...
@ Amico, sono italiano, lavoro nel settore alimentare, sono esperto di grano, e ti dico che la farina per la pizza richiede almeno 12,5% di tenore proteico, che col grano tenero italiano è molto difficile da ottenere. Per questo tutti i mulini del paese, Caputo incluso, miscelano con grani detti "di forza" provenienti da Nord Europa e Nord America.
@ Proper pizza flour needs 12,5% protein and medium strength, Italian soft wheat doesn't normally reach it so we mix it with North European and North American strong wheats. You can read as much in the official Neapolitan pizza "disciplinare" with the official recipe and ingredients.
@ Important to note that 00, 0, and 1 are mainly granulometry classifications typically used in Italy but mostly for domestic use. They say little about the most important working parameters for professional flours.
Flours are more importantly rated by strength (W, closely tied to protein content) and the ratio between extensibility and resistance (P/L, harvest and cultivar dependant).
With a pizza flour you are looking for medium strength and high extensibility. The opposite is true for cookie dough, for example, where you want a non-extensible low strength flour. So good millers will always mix different wheat varieties to obtain the right characteristics. This happens with all professionally rated 00, 0 and 1 flours.
Italy produces very little milling wheat, we have to import over 60% of our national consumption from abroad. We mostly source low protein varieties from Hungary, Romania and Ukraine, medium from France and Central Europe, and high protein from Canada and the US.
Incidentally this is also true for premium pasta brands as Italian durum wheat for pasta is too low in protein for premium pasta and would easily overcook. You may be surprised to know that the world's best pasta wheat by a long shot is Arizona Desert durum wheat.

Eva!! When you make pizza sauce try Anchovies in the sauce! Make a paste out if the Anchovies and mix it in with the sauce. I found out years ago that whenever you get a really good pizza at a great restaurant they put in a secret ingredient...anchovies! I tried it at it's great! You don't see the anchovies in the sauce but the favor is fantastic!

Hi guys, when I want a pizza but don't have a frozen one or no money to order one then I use Thomas's English Muffins or Italian bread loaf I cut in half and I toast the halves lightly then put on a little sauce & my toppings. Usually pepperoni, bell peppers, mushrooms, etc... then so shredded mozzarella and back in my toaster oven. We can't all have pizza ovens in our houses, I know ur new house doesn't have one anymore but u can buy one. They make some really nice indoor & outdoor ones now.
But the English Muffin & Italian bread pizzas are a good alternative.
I hope you guys managed to stock up on flour and yeast, starting to see it in the stores lately...

I'd have a slice of that cauliflower pizza as a side dish to something. It's the same as if I nuked some frozen cauliflower and just topped it with Italian sauce and cheese. Nice side to have. Good work. Pantry cuisine is interesting.
Cauliflower pizza is pretty good. Trouble with yours was too much liquid and not enough cheese in the crust. I have made it before, and if you get it dry and thin enough, it turns out not too bad.

In a pinch oatmeal can be made into flour in the food processor and as far as yeast if your running low and you know the the grocery store a crap shoot to begin with. That's were have a starter on hand is a good idea. As long as the starter is in the right warm dark environment so the yeast can thrive and feed you'll be able to make bread.
Clearly, the winner is ALWAYS going to be Harper. He hit the lottery!
About Pita Bread. When I make certain dips...especially hummus...I make Pita Chips! Cut the pita like you cut a pizza in triangles. Sprinkle with Parmesan cheese...a little salt and pepper and drizzle a little olive oil. Bake the chips till crispy! They come out awesome!
In spite of myself I have to vote for Harper's flourless pizza (even if in fact there was flour, so he cheated), his pizza reminds me of the snack that our grandmother made as a child with the "spianata" (a type of bread we have in Sardinia, one of the two major Italian islands) ... as far as pizza with flour is concerned, there is no competition ... with the wood oven! spectacular!

Use a large tortilla shell sauce cheese put in fry pan cover til cheese melts about 2 minutes, not to bad in a pinch. I always keep tortillas in the freezer.

For quick we used to make pizza on Toasted English muffin!
Ava put cheese and spices into the cauliflower - makes it taste better and cook before adding topping. Prevents it from getting soggy.
I've made pizza crust out of cauliflower (not as wet as Eva's) but my favorite now is a Pizza Casserole. The base is browned sausage, then sauteed mushrooms, sauce, mutz, and topped with pepperoni. No, not a Classic Pizza but it so good!
I used to make pita pizza in my mini oven regularly during college. Also I'd buy day-old plain bagels and put sauce on both sides then pepperoni and cheese inside and warm it up at school for lunch. These days I buy pre-made low-carb crust most of the time. During the height of the pandemic empty shelves, keto lifestyle foods were still found while everything else was wiped clean. Once in a long while, I will treat myself a good real pizza; although it sits like a metal ball in my gut for a while.

I’m Milanese and my grandma used to make for Sunday dinners little pizzas made with toasted bread (il pan carrè per capirci), tomato sauce, mozzarella cut in cubes and a bit olive oil. All cooked in the oven. Mine is just a family thingy made with the previous week’s leftovers and it has become a family thing that my grandma used to make, my mum makes them too and nowI make for my flat mates. Your challenge was very cute.

The cauliflower crust would be perfect if it was thinner. I occasionally use pitas or flatbread to make a quick pizza, they're better if you don't burn them. 🤣

Try adding some good butter layer on the base of paper before pouring cauliflower dough and baking it. Then, it won't stick.
