- Mangoes are harvested either by hand for reachable fruit or with nets and sticks for higher branches, ensuring gentle handling. After harvest, mangoes are inspected, washed, and sorted using roller-bar machines to remove unripe or diseased ones. They are then prepared for market or juice production, involving pre-heating to remove enzymes, peeling, pulping, and degassing to extend shelf life. Homogenization and bottling follow, ensuring even particle size and secure packaging. For frozen mangoes, a blanching process preserves color and flavor, followed by dicing, quick freezing with fluidized monomer machines, and final inspection before packaging to maintain quality.

While it’s important to acknowledge the hard work, we must also be aware of the working conditions, wages and environmental impacts involved in mass food production. Gratitude should not replace the need for improvements in the conditions of these workers.
