Does everyone forget that the Dwarves were the heroes of the story. They took Snow White in and even protected her and took out the villain. They were the one who killed the evil queen after Snow White fell under the spell of the apple. That's why the original was "Snow White AND the Seven Dwarves." Disney missed the chance to make 7 dwarf actors the heroes and the main characters in the movie.
Plus they would have had to hire seven additional dwarfs as stand-ins for the actors - and most likely a few more dwarfs for some stunt work. Dinklage the DB probably didn't want the competition.
The real issue here is that Disney keeps remaking classics and ruining Walt Disney's legacy with bad films. You've got it backwards sir. There's an old saying: "if it ain't broke, don't fix it".
The "modern audience" has been a disappointment, letting "modern" video games bomb, one after another, leading the massive layoffs and studio closures. Same goes for their complete lack of support for Disney's recent failures from movies to TV shows. It's almost as if that audience doesn't exist.
