Every time I make gravy, and it doesn't matter what meat you use, my best gravy happens when I brown the meat, add the flour and let the flour turn color. Add the milk and slow simmer just to the point of boiling. Turn way down and let it sit there till it gets thick. Slow cooking is the key to get max flavor. It's worth the time.
I don't know how I ended up looking at sausage gravy recipes since that really isn't a thing where I'm from. I watched recipes that just had fried sausage and milk and I thought surely it must have occurred to someone to throw an onion or something in there! I'm glad I landed on this version. I made mine with rosemary (oops!) instead of sage, oil instead of butter, and threw some sliced mushrooms in there because why not. Everything else was the same as yours. It turned out amazing and I'm sure it'll be a hit. Thank you for sharing your recipe 😊

I make my sausage first. Set aside and make my gravy in the same pan. Sometimes I have to add more milk or whatever. It feels "safe" that way. I'm gonna try this way. Wish me luck.
