    This is what I found
The colour is caused by the tree producing anthocyanins (an antioxidant). It is believed that it protects these younger (more tender) leaves from UV light. As the leaves begin to toughen they will turn green

Can I tip my freshly planted 3 gallon trees, or would you recommend letting those grow how they want until they are a little older?

I wait a few months and until the tree is about 3-4 feet high.

New tree growth appears lime green because it initially produces less chlorophyll, the pigment responsible for photosynthesis. Chlorophyll absorbs light most efficiently in the red and blue parts of the electromagnetic spectrum but reflects green light, which gives mature leaves their dark green color. As new leaves age, they produce more chlorophyll, increasing their capacity for photosynthesis and turning them darker. Young leaves are also thinner and have fewer chloroplasts (structures within cells where photosynthesis occurs), contributing to the lighter color. This lighter color allows young leaves to optimize photosynthesis in shaded areas under the tree canopy and deters herbivores who might avoid them due to the perceived lower nutritional value. Some trees produce purple leaves when young due to anthocyanins, pigments that provide UV protection and reduce oxidative stress. These pigments act as a sunscreen and antioxidant, shielding young leaves from harmful sunlight and free radicals. As the leaves mature and the need for this protection diminishes, chlorophyll production increases, which masks the purple color of anthocyanins and turns the leaves green.
