Actually I have to add this Im 55 and have been riding bikes since i was 6. Vstrom we bought is 2011 all ABS. It is the best 650 Ive ever ridden and definitely one of the best bikes. I am a convert.
Glad to see that you included frequent pit stops in a long distance journey. It's the secret to a safe, long ride. And if you have a Kawasaki dealership where you live, take a look at the Kawa Versys before you decide. It pays to compare before you choose.
I have a 05 650 vstrom purchased new about 80000 on the clock now , I quite regularly get mine up to about 185-190 . The highest indicated was about 203kph, i weigh 70kg 5 10 tall , screen on the lowest setting , tyre pressures a tad hjgher at 38psi. I have heard that the later versions with the closed loop injection system (inc the current model ) , didnt seem to get past 185kph, my guess is suzuki engineering the top speed in the later models, interesting, but a moot point, as its not what the bike is about . But god dammit my idea of effective enginneerjng is a machine that opeeates up to its performance potential. I think the only engjneering in regards to top speed should be the riders wrist. Great choice you have made , put simply, iits the mid size bike that can.
Sean Lee McDonald's in Germany is incredibly much better than in the US. Coming back to the US after three years stationed in Germany with the Army I was extremely disappointed with McDonald's in the USA... :(

112 mph is fine for a tourer; you don't usually go over 90 mph for comfort on long distance (Sydney - Adelaide return over a weekend), and 70 mph is good so you can pass at least a few petrol stations. Not to mention the speed limit on some luggage!

KLR650 was tops for adventure touring. Pity they seem to not make them now.
Thanks for the video, 180 kph is about right, my 2011 did about the same GPS timed, it was loaded with Suzuki hard bags and top box.

My DL650 tops at 108 mph, 178 km/h, with the Suzuki hard side panniers and a medium top box installed.

111mph top speed sounds about right. Nice bike still wish it could get usd forks but it's already getting pricey in LT trim

It is same engine in SV 650 which go 139 mph ! It may actually be closer to 120-125 mph.
Did you consider the Honda CBR650F?
At her height 6'3" would very cramped. Also they seem to camp in fields and have favoured adv bikes
