    but what is the difference between the features? when will i choose each one of them?

      When creating a loft you only have control of the start and end profile curvature, boundary if you noticed in the clip you get control boxes on screen for each sketch (in this case 3).
      In so far as which one should you use it comes down to your own need for control on the profile... If you need to blend the profile at each sketch to get your desired shape then boundary is the one to use if you can get the desired outcome using guide curves then go with loft.
      The shapes you're going to be making with both these features are very subjective and almost freehand profiles in nature (although you can dimension the likes of the guide curves) so there's no definitive answer to which you should use...
